An AMAZING chocolate recipe that is prepared in the microwave. Add one ice cream scoop once it’s heated! HEAVENLY!

Ingredients

  1. 1 cup margarine
  2. ¼ cup unsweetened cocoa powder
  3. 4 eggs
  4. 2 cups white sugar
  5. 1 ½ cups all-purpose flour
  6. 1 cup chopped walnuts
  7. 1 teaspoon vanilla extract
  8. 2 cups miniature marshmallows
  9. 4 cups confectioners’ sugar
  10. ⅓ cup unsweetened cocoa powder
  11. ⅔ cup milk

Instructions

  1. In 9×13 inch microwave-safe cake dish, melt the margarine and 1/4 cup cocoa together. Stir in the eggs. Mix in the 2 cups sugar, flour, nuts and vanilla.
  2. Bake in microwave oven on high, for 11 minutes, rotating dish after 5 minutes. Remove from microwave and sprinkle marshmallows on top.
  3. To make the frosting: In microwave-safe bowl, combine confectioners’ sugar, cocoa, and milk. Cook in microwave for 2 minutes, stir and pour over cake.

Oh what a smoking disaster. Please note, microwave times will vary! Besides the fact that in under 10 minutes it charred to become something you might expect to find at the bottom of a fire pit, it was not only too bubbly to support it’s weight but also overflowed all over the (fortunately removable) rotating microwave plate. I can’t say if this cake was tasty or not as I didn’t dare put any in my mouth. However, it doesn’t smell wonderful while cooking (even before burning). I know I’m crazy, but I think I’m willing to try this again.

Delicious! Very rich & moist! However, the frosting is runny, too much liquid. The next time I try this, I’ll cut the amount of milk in half. Very simple to make, but I’ll also likely use a bowl to mix the ingredients next time. Mixing the cocoa & ingredients in a pan was too much work.
