Microwave Cashew Brittle

In only about 10 minutes, you can make simple microwaveable buttery cashew brittle. Every time I make it, it vanishes quickly. You cannot stop once you start, so be careful.

Ingredients

  1. 1 teaspoon butter, or as needed
  2. 2 cups salted roasted cashews
  3. 1 cup white sugar
  4. ½ cup light corn syrup
  5. 1 tablespoon butter
  6. ½ teaspoon butter flavoring
  7. 1 teaspoon pure vanilla extract
  8. 1 teaspoon baking soda

Instructions

  1. Lightly butter a baking sheet with 1 teaspoon butter.
  2. Mix cashews, sugar, and corn syrup in a medium microwave-safe bowl. Microwave on high for 4 minutes. Remove, stir, and microwave for another 3 minutes. Remove and add 1 tablespoon butter, vanilla extract, and butter flavoring; stir to combine. Microwave for 2 minutes.
  3. Remove from the microwave and add baking soda; stir and fold until mixture is fluffy. Work quickly and spread mixture evenly on the prepared baking sheet. Let it sit until completely cooled. Break into pieces and keep in a airtight bag or container.
  4. It was tested in a 1100 watt microwave. Adjust your time with the wattage of your microwave.

This is the best brittle! I used organic roasted peanuts and added 1/2 extra teaspoon of baking soda to make it fluffier/crispier. I didn’t have butter flavor because I didn’t know it existed. lol. I also kept the buttered baking sheet warm to help with spreading. It is light and crispy and very tasty! Thank you for the recipe.

Excellent as written. This will be my go to regardless of what nut I am making the brittle with. The bowl gets HOT so I recommend silicone to keep your hands protected. Something helpful I will mention is that 2 cups of nuts is exactly an 8 ounce can of cashews.
