a yearly custom for the family. To help us remember to balance the bitter with the sweet in the upcoming year, we eat it on New Year’s! Additionally, it is kid-friendly—I have yet to meet a kid who didn’t enjoy it! Try this if your child despises sauerkraut. Fast and simple to prepare, but requires more time in the oven to reduce the liquids and bring out the sweetness. It can be served as a main course or a side dish, and some family members even get a bowlful for a late-night snack, it’s true!

Ingredients

  1. 3 (32 ounce) packages sauerkraut, drained
  2. 2 (15 ounce) cans turnip greens, drained
  3. 2 onions, quartered
  4. salt and ground black pepper to taste
  5. 1 (12 fluid ounce) can frozen apple juice concentrate, thawed
  6. 1 (12 fluid ounce) can water
  7. 1 ½ cups brown sugar, or more to taste
  8. 3 pounds kielbasa sausage, cut into 3-inch pieces

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Empty sauerkraut and turnip greens into a colander and rinse lightly; drain. Spread sauerkraut, turnip greens, and onions in an even layer in a large baking dish and season with salt and black pepper.
  3. Whisk apple juice concentrate, water, and brown sugar in a bowl, dissolving the sugar. Pour juice mixture over vegetables. Arrange pieces of kielbasa sausage into dish atop vegetables.
  4. Bake in the preheated oven until most of the liquid has evaporated and the kielbasa is browned, about 2 hours, stirring every 20 minutes.
  5. Get the darker-colored apple juice. I have used grape, cran-apple, cran-grape, cran-blueberry, and pineapple juice in a pinch if outta my favorite apple juice, but apple tastes best!

I made it on top of the stove in a pan since I didn’t have two hours for it to bake 🙂 It turned out great and was delicious! Excellent flavor.
