Ingredients

  1. 1 cup quick-cooking oats
  2. 1/2 cup sliced almonds
  3. 1/2 cup dark raisins
  4. 1/2 cup golden raisins
  5. 1/2 cup dried apricots
  6. 1/3 cup unsalted butter, room temperature
  7. 1/2 cup brown sugar
  8. 1/4 cup golden molasses
  9. 1 egg
  10. 1 cup unbleached all-purpose flour
  11. 1/4 cup whole-wheat flour
  12. 1/2 cup nonfat dry milk
  13. 1/4 cup toasted wheat germ
  14. 1 1/2 teaspoons baking powder
  15. 1/2 teaspoon baking soda
  16. 1/2 teaspoon vanilla
  17. Pinch gray salt
  18. 1/2 cup milk (2 percent is preferable)
  19. 1 tablespoon unsalted butter

Instructions

  1. Preheat oven to 300 degrees F.
  2. Place oats and sliced almonds on a baking sheet. Toast in oven for 10 minutes. Set aside. Turn the oven to 325 degrees F.
  3. Place raisins, apricots, oats, and almonds in a food processor. Pulse about 10 times until coarsely chopped. Set aside.
  4. In the bowl of a heavy-duty mixer fitted with a paddle, beat the butter, brown sugar, molasses and egg until light and fluffy.
  5. In a separate bowl, combine both flours, dry milk, wheat germ, baking powder, baking soda, vanilla, and salt. Add to the creamed mixture. Add the milk and mix thoroughly. Add dried fruit mixture.
  6. Butter a 13 by 9 by 2-inch baking pan. Pour in the batter and spread evenly. Bake for about 30 minutes, until set. Cool in the pan. Cut into 18 (1 by 4-inch) bars.
  7. To store, wrap bars individually in plastic wrap. Will keep for about 1 week. For longer storage, freeze for up to 3 months.

These are in the oven… changes to recipe used good maple syrup instead of molasses… oat flour instead of wheat germ… I had a tray of dried fruit and hand chopped 4 different fruits. Left out the dried milk and used almonds and pecans chopped. No salt!! Aroma from oven heavenly

These are the perfect meal replacement bar! I wrap them individually as suggested and they’re good to “grab and go” throughout our busy week. I use honey for molasses, and almond extract for vanilla to play off the sliced alomonds. I don’t chop up the oats or almonds for added texture. We like them less crumbly and more moist so 25 instead of 30 minutes in the oven. Once I was out of apricots so I used craisins and it was just as great! I love knowing exactly what’s in the food I eat and feed others so I’m proud to use of this recipe.

These bars are excellent. They are loved by the kids (14,6 & 1) and parents alike in our family. It’s just nice knowing EXACTLY what goes into them. No junk! I had whole roasted almonds on hand, so I just used those. Thanks for such a great recipe! I will definitly keep these on hand VS store bought from now on.

Is it possible to get the nutritional information? (particularly fiber, fat, and calories?)

I made these this morning but didn’t have all of the ingredients listed. I substituted honey for molasses and whole wheat pastry flour for AP. I didn’t have dry milk so I left it out. They turned out quite well except next time I will add a little cinnamon for warmth and more than a pinch of salt (1 tea; it needed more flavor). Very good breakfast!

very good. Will make again. The only trouble I ran into was the bars crumbling when I went to cut them.

Loved the recipe. Don’t like mollasses. I switched it up and added honey instead and they are yummy….I also made the whole thing in the food processor. Just put all dry ingredients in and streamed in the wet (egg-honey-milk-vanilla). Ran for a few seconds and voila…done.

they weren’t what I was expecting texture wise, but they taste great. They’re sweet enough to make you think that you’re having a treat, but actualy good for you!

these are a little messy to make, but very much worth the effort. I have not found another recipe better than this for a breakfast bar or workout bar. They taste much better than the store bought bars.
