When it comes to cocktails, tequila is my go-to. Santo Tequila makes some of the highest quality tequila I’ve ever had, and they’ve also made the first ever mezquila. Classic palomas typically use mezcal, which is often too smoky for me. Using the mezquila introduces a light and smoother taste, with just a hint of smoke.

Ingredients

  1. 1 tablespoon kosher salt
  2. 1 tablespoon chile-lime seasoning
  3. 1 tablespoon sugar
  4. 1 lime wedge
  5. 2 ounces mezquila, such as Santo Mezquila
  6. 1 ounce freshly squeezed grapefruit juice
  7. 1 ounce freshly squeezed orange juice
  8. 1/2 ounce freshly squeezed lime juice
  9. 2 ounces soda water

Instructions

  1. For the rim seasoning: Mix together the salt, chile-lime and sugar and place in a flat dish. Run a lime wedge around three-quarters of the rim of a rocks glass. Dip the rim into the mixture to coat. Fill with ice and set aside.
  2. For the cocktail: To a cocktail shaker filled with ice, add the mezquila, grapefruit juice, orange juice and lime juice. Shake vigorously for 15 seconds, then, using a strainer, pour into the prepared glass. Top with the soda water.
