Mexican Roll Ups

Making and eating these delectable delights are both enjoyable activities. This dish comes from WEBB Cooks, a collection of Robyn Webb’s writings and recipes provided by the American Diabetes Association. Duration of preparation: 15 minutes.

Ingredients

  1. 6 (12 inch) whole wheat tortillas
  2. 6 leaves romaine lettuce
  3. 1 ¼ pounds sliced roast beef
  4. 1 cup chopped tomatoes
  5. 1 cup chopped red bell pepper
  6. 2 tablespoons olive oil
  7. 3 tablespoons red wine vinegar
  8. 2 tablespoons ground cumin

Instructions

  1. For each roll-up, tear off about a 15 inch piece of wax paper or aluminum foil. Place the tortilla on the paper or foil. Place a romaine lettuce leaf on top of the tortilla. Add about 3 ounces of beef on top of the lettuce for each tortilla. Divide the tomatoes, red and yellow bell peppers, oil, vinegar and cumin over each tortilla.
  2. Begin rolling the paper or foil over the tortilla to encase the filling. Roll until the sandwich is completely rolled up. To eat, peel back the paper or foil.

This was pretty decent and easy to make. A little heavy on the cumin (and I like spicy), and not very filling. I thought they were a bit better heated. I have to say I don’t understand the concept of the wax paper – this does *not* make them fun to eat, and in fact, just makes a big mess trying to peel back the paper and keeping all those fillings intact. I just rolled them up with no paper and ate them from the end like any wrap.

I shredded the roast beef. Also I put sour cream and salsa on the filling. It tasted much better.
