Ingredients
- ½ pound ground beef
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 (16 ounce) can refried beans
- 4 (10 inch) flour tortillas
- ½ cup salsa
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 green onions, chopped
- 2 tomatoes, diced
- ¼ cup thinly sliced jalapeño pepper
- ¼ cup sour cream (Optional)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
- Place ground beef, onion, and garlic in a skillet over medium heat. Cook until beef is evenly browned and crumbly, 5 to 7 minutes. Drain and discard grease. Season beef with chili powder, cumin, paprika, salt, and pepper.
- Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread 1/2 of the seasoned ground beef over each one, and then cover with a second tortilla. Bake in the preheated oven until tortillas are crisp, about 10 minutes.
- Remove pizzas from the oven and set aside to cool slightly. Then spread 1/2 of the salsa over each top tortilla. Cover each pizza with 1/2 of the Cheddar and Monterey Jack cheeses. Place 1/2 of the tomatoes, 1/2 of the green onions, and 1/2 of the jalapeño slices onto each one.
- Return pizzas to the oven and bake until cheese is melted, about 5 to 10 more minutes. Let pizzas cool slightly before slicing each one into 4 pieces.

This is excellent and will make again in the future. Good with eggs for leftovers. I made one with beef and one with chicken. Also used black beans.
I used one flour tortilla for each pizza. I used Colby Longhorn and Mozzerella cheeses. Excellent Mexican pizza!!!!

Delicious easy to make dinner
Whole family enjoyed these. I took the easy way out due to time and used a packet of taco seasoning instead of the individual seasonings. Doubled the recipe and put the pizzas on cookie sheets. I would prefer crispier shells so I will try and put the bottom shell in the oven to toast it before layering the toppings. Topped it with cilantro and avocado once it came out of the oven.
So yummy! I omitted the meat as were vegetarian and just added the spices to the onions and garlic while they were sautéing. I’ll definitely make again!
It is delicious and my boyfriend loves it. I added diced jalapeño peppers to the burger mix and extra cheese on top of it all. It will be part of our menu for the future!
This pizza satisfied my craving for a light Mexican meal. I made this for lunch today. Super easy. Instead of two pie plates, I used a rectangular glass baking dish. No dramatic changes to ingredients made other than turkey in lieu of beef. Very good!
Good texture. The refried beans actually gave it more substance. It was really good.
I used homemade enchilada sauce instead of salsa, and yellow tomatoes. I also made my own tortillas. If I make again I’ll toast the tortillas a bit so they are crisper.
I used taco seasoned ground turkey, refried black beans, and just a small amount of green salsa on each pizza. Topped with sharp cheddar, jalapeno slices, black olives, tomatoes, onions, fresh cilantro and a dollop of sour cream. I baked the tortillas prior to assembling the pizzas to crisp them per some of the suggestions. These were delicious!

Super delicious recipe! Way better than I thought it would be. The family loved it. I will be adding this to my regular rotation, especially on a sports night! I did use medium spiced refried beans and Monterey Jack cheese with habaneros. Otherwise, I followed the recipe. Very filling. Very good!

I like the pie pan usage and I did make it that way, but to keep the bottom tortilla more flat, what about a springform pan or heat proof skillet? One other thing I would change is that in place of the salsa, taco sauce instead. Less chunky, spreads more easily.
