Ingredients
- 4 ears corn
- 1/2 cup mayonnaise
- 1 1/2 cups sour cream
- 1/4 cup freshly chopped cilantro leaves
- 1 cup freshly grated Parmesan
- 1 lime, juiced
- Red chili powder, to taste
- 2 limes cut into wedges, for garnish
Instructions
- Remove the husks of the corn but leave the core attached at the end so you have something to hold onto. Grill the corn on a hot grill or cast iron griddle pan until slightly charred. Turn it so it gets cooked evenly all over. Mix the mayonnaise, sour cream and cilantro together. Grate the Parmesan in another bowl. While the corn is still warm slather with mayonnaise mix. Squeeze lime juice over the corn and shower with Parmesan. Season with chili powder and serve with extra lime wedges.

Our family and friends loved this recipe. But I agree with a previous comment. The mayo / sour cream quantities make way too much. I was making 7 ears of corn and I still had approx half of the mixture left in the bowl. A potential waste but I think I’ll solve that problem by using the leftover mixture for more corn next weekend! Really tasty!

The only problem I have with this recipe is the proportions. It makes way too much sauce and cheese for the amount of corn. I’d recommend making 1/3 of the recipe given for 4 ears of corn. Besides that, the recipe was delicious! I made it for family and we’d never had Mexican style corn before and were amazed how good it was!
