Ingredients

  1. 1 ½ pounds boneless skinless chicken breasts, cut into bite-size pieces
  2. ½ cup chopped onion
  3. 1 clove garlic, minced
  4. 3 tablespoons butter
  5. 2 cubes chicken bouillon
  6. 1 cup hot water
  7. ¾ teaspoon ground cumin
  8. 2 cups half-and-half cream
  9. 2 cups shredded Monterey Jack cheese
  10. 1 (14.75 ounce) can cream-style corn
  11. 1 (4 ounce) can diced green chiles
  12. 1 dash hot pepper sauce
  13. 1 tomato, chopped
  14. ¼ bunch fresh cilantro sprigs, for garnish

Instructions

  1. In a Dutch oven, brown chicken, onion, and garlic in butter until chicken is no longer pink.
  2. Dissolve the bouillon in hot water; Pour into Dutch oven, and season with cumin. Bring to a boil. Reduce heat to low, cover, and simmer for 5 minutes.
  3. Stir in cream, cheese, corn, chilies, and hot pepper sauce. Cook, stirring frequently, until the cheese is melted. Stir in chopped tomato. Garnish with cilantro.

I have made this many times over the years as the family loves it! We love cilantro and cumin and always add extra. I even put cilantro in the soup. They both really make this soup special. I use canned, drained diced tomatoes and extra corn and hot sauce. I also use canned chicken broth. Make it your own according to taste and it is amazing!

I cut this out of Taste of Home magazine years ago and it is still a favorite. I doubled the recipe today for a party and doubled the cumin and added an extra can of cream corn, but the best change was adding about a cup of of salsa verde — now it’s perfect!!

Like others suggested, I used chicken broth and added diced potatoes. I think I’ll add fresh corn next time and double the seasoning. I also used the blendable shredded cheese that was monterey jack and cheddar. It was even better the next day!

I needed a recipe to use up some ingredients. I didn’t have all in the recipe so I used what I had. 2 cans of evaporated milk, some heavy cream and chicken broth. Added a can of green chilies, some plain and mexicali corn and Rotel tomatoes. Can’t wait to try the origiinal recipe (although dh and dgd LOVED this version.) I’m rating this 5 stars because it gave me a great jumping off point to use up some ingredients I had.

Chowder was ok. It was missing a little something so I added more cumin and some black pepper. Next time I will add these to the meat-onion-garlic mixture. I would also add another can of creamed corn next time.

I made this soup with some changes. To make it lower fat used lean ground turkey, olive oil and low-fat milk. I sliced up some dry red chili. To thicken it added smashed potatoes. To give it some crunch added some celery. Had it with warm corn tortillas.

This chowder was probably the best I’ve ever had. I added one can of cubed potatoes and some frozen corn. Went heavy on the hot sauce and it was AMAZING!

Loved it. I made a few changes just based on what was in my pantry and what we like. Changes – I used canned chicken breast (I was in a hurry). No cream cheese, used milk instead of half and half, 2 cans of green chiles, added a can of corn, a can of diced potatoes, and a can of hominy. I believe you can adjust this recipe to your own style and supplies and will still have a great soup.

I find it a little crazy that the only seasonings listed in this recipe are a tiny amount of cumin and a “dash” of hot sauce. Even the amount of bouillon listed wasn’t near sufficient. I made this recipe exactly as described and found the final product to be quite “milky” and bland and unappetizing. I ended up almost tripling the cumin, tripling the hot sauce, adding a couple teaspoons of chili powder, a teaspoon of oregano, and a very good amount of kosher salt and black pepper. This definitely helped, but the recipe was still missing a little something, which my finite chef skills were unable to figure out on this particular weeknight. Kids and hubby ate it but weren’t entirely thrilled. I will use this as a base recipe and hopefully formulate something amazing, as I typically love corn chowder.

I ??????this recipe!! I do use fresh jalapeños instead of Chile’s and omit hot sauce. I use to omit the cilantro because someone else in the household didn’t like it, but don’t do it, I didn’t know what I was missing!!

It smells looks and Tastes yummy!!!!!! If I were about to die on an island I wouldn’t pick this meal but some idiot offered it to me maybe I’ll take it. Instead of chicken I added shrek toes for more flavor. And I didn’t add any salt because the sweat from the shrek toes was already salty. Yeah it’s yummy that’s all I gotta say 🙂

Oh so good. Easy enough to make. I even used bouillon cubes & water like the recipe called for instead of broth like others suggested & it was fine. I really don’t think the broth would’ve made it any better. I did use 2 roma tomatoes because that is what I had. We use those most of the time cause they are meatier than regular tomatoes.

Five starts for the combination. There are somethings that go together so well and this combo does. It is very robust, as others, I didn’t have all the exact ingredients. Frozen corn instead of creamed, no green chillies so I used a half cup salsa, evaporated milk and milk to make 2 cups, and a combination of cheeses of whatever I had. still awesome, my son wanted the recipe. I am sure it will be even better (more Savory) with the exact ingredients.

Made this as listed and found The chowder to be too blah for us. As listed, personally would only give a 3 rating. When following original recipe, used two cloves garlic instead of one, and used chicken broth instead of water. After taste test before serving, decided to add another can of creamed corn, additional teaspoon of Cumin, Additional tablespoon of hot sauce , a can of tomatoes with chilies and cup of cheddar cheese. Hubby and I both loved altered recipe. Hate to alter recipes but know what our taste preferences are. Was a great starter. Rated 5 so I Know to make again.
