Memphis Beale Street Burger

Ingredients

  1. 2 1/2 pounds ground beef
  2. 1 small shallot, finely chopped
  3. 2 clove garlic, finely chopped
  4. 1 teaspoon Neely’s Dry Rub seasoning
  5. 1 tablespoon Worcestershire sauce
  6. 2 teaspoons salt
  7. Freshly ground black pepper
  8. Butter
  9. 6 brioche buns
  10. 6 slices pepper jack cheese
  11. 12 slices smoked apple wood bacon, fried crisp
  12. 1/2 cup Neely’s “Secret Sauce”, recipe follows
  13. 1 pint cole slaw (recommended: Neely’s Cole Slaw)
  14. 2 beef steak tomatoes, sliced
  15. 1/3 cup sour cream
  16. 2 tablespoons mayonnaise
  17. 2 tablespoons buttermilk
  18. 2 tablespoons BBQ sauce (recommended: Neely’s BBQ sauce)
  19. 1/2 lemon, juiced
  20. 1/4 teaspoon cayenne pepper
  21. Kosher salt and freshly ground black pepper

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large mixing bowl, break up the meat with your hands. Add the chopped shallot, garlic, Neely’s Dry Rub, Worcestershire sauce, and salt and pepper, to taste. Mix with a wooden spoon until thoroughly incorporated. Using your hands, divide the meat into 6 equal balls. Flatten them into patties and use your thumb to create an indent in the center of each burger. 
  3. Grill the burgers, uncovered, for 3 minutes on the first side. Flip and continue cooking for another 3 minutes for medium-rare, and 4 minutes for medium. Remove from grill and immediately top with the cheese.
  4. Butter the buns and place on the grill. Toast for about 1 minute and remove from grill.
  5. Build your burgers by topping with the bacon, Secret Sauce, coleslaw, and tomatoes. Add onion rings if desired.
  6. Mix all the ingredients together in s medium bowl. Cover with plastic wrap and refrigerate until serving, allowing the flavors to develop. Can be made a day ahead.

A great burger. I made the slaw (minus some of the sugar and it made for a great topping. I will definately make it again!

VERY nice flavor. I roughly cut this recipe in half for just DH and I, and still ended up with 4 decent sized patties. I topped then with a cayenne pepper & jalepeno cheddar cheese and also with the secret sauce… my husband LOVED it. I was a bit of a heifer myself and scarfed down my burger in seconds… will definitely make again. PS. Making an indent in the pattie really helps with cooking uniformily.

These burgers were great. There were only two of us so I used 1 pound of hamburger and halved all the other igredients, made three nice size burgers – my husband ate two!

I made this hamburger with ground buffalo meat. We think the flavor is better than beef. I followed the recipe exactly as written except for using the buffalo meat. It was absolutelly wonderful. I made her sweet and spicy slaw and put it on the bun and it was scrumptuous. Love your show.

This burger was the bomb I got the coleslaw from their book. It came out very delicious. I did every recipe from the show except the desert I did the coookies and cream cake. Thank you Gina and Pat! My oldest daughter who doesn’t really like to eat a lot passed on desert so she could finish her burger, onion rings and potatoe wedges she even ate some of her siblings.

This is the best burger I have made in my life. The sauce is incredible, I used English muffins instead of buns. Love the Nealy’s and I definitely love this recipe.
