Ingredients
- Yellow or pink cocktail sugar or sanding sugar (sold at specialty stores), optional
- 1 cup cubed seedless watermelon
- Ice cubes
- 3 1/2 ounces limoncello
- 1/2 ounce lemon-flavored or light rum
- Splash club soda
- Lemon wedge
Instructions
- Rim a rocks glass with the sugar, if desired, and put in the freezer. Puree the watermelon cubes in a blender until juicy.
- Fill the prepped glass with ice. Add the watermelon juice, limoncello and rum. Top off with enough club soda to give the drink a light bubble. Garnish with the lemon wedge. Drink.

This drink is delicious! It just says “SUMMER”. I made it at a party and had to make several more batches. Almost wish I’d never tried it! 🙂
What is Limoncello and where is it that I purchase pink cocktail sugar and the sanding sugar? Thanks you, some of us don’t k now what all the ingredients are or the terminology, sorry.
My wife and I tried this and I didnt think it was worth making. My wife couldnt even drink it and ended up throwing it away. I dont know if it was our melon or what but I wouldnt recommend it.

I tried this drink to compliment a seafood lasagna I made for my husband and I. It was great. I will add this to my recipe booklet to make again and again for future dinners.

My husband and I tried Meloncello for the first time tonight, and we both thought it was outstanding! My only modification to the recipe was to decrease Limoncello from 3.5 oz to 2 for his and 1.5 for mine (it’s heady stuff!) but there was still plenty for a subtle kick without a strong alcoholic aftertaste. This drink is light, refreshing and easy to make – a perfect treat for a sultry summer night.
