Mediterranean Zoodles with Shrimp

This vibrant cole slaw is ideal for Mardi Gras celebrations or any other occasion. It is displayed in purple, green, and gold, which are the Mardi Gras logo colors. With a touch of cayenne pepper for heat, the sauce provides the ideal balance of sweet and tart. The coleslaw will go mushy if it is dressed in advance.

Ingredients

  1. 2 tablespoons olive oil
  2. 2 cloves garlic, minced
  3. 1 pound large shrimp, peeled and deveined
  4. salt and ground black pepper to taste
  5. 20 cherry tomatoes
  6. ⅓ cup pitted Kalamata olives, coarsely chopped
  7. 4 medium zucchini, cut into noodles with a spiralizer
  8. 2 teaspoons oregano
  9. 1 lemon, juiced
  10. ⅓ cup crumbled feta cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat and saute garlic until fragrant, 10 to 15 seconds. Add shrimp and season with salt and pepper. Cook until shrimp are pink, 2 to 3 minutes on each side. Remove to a bowl.
  2. Add cherry tomatoes and olives to the skillet and cook until tomatoes begin to soften, 2 to 3 minutes. Add zucchini noodles, oregano, lemon juice, salt, and pepper. Keep cooking, stirring frequently, until zoodles are tender yet firm to the bite, 3 to 4 minutes.
  3. Return shrimp to the skillet and top with feta cheese. Toss to combine and serve immediately.

Easy and excellent flavor! Great way to use whatever veggies are ripe in the garden. Only had one zucchini so served over rice.

Lots of great flavor but I found it a little dry. Possibly didnt cook the noodles enough as they were not as tender as expected. The combination of flavors is outstanding though.

Good, basic recipe. I have never made a recipe with only one review before but it sounded good. I really liked it, probably will tweak it next time. One word of CAUTION- the recipe calls for a lot of Oregano. I only used 1/2 tsp and it still was pretty strong for me. Might suggest subbing for a “greek seasoning mix” next time.

I left out the olives as they are not my favorite… otherwise, I LOVE this recipe!!!
