Mediterranean Flatbread Pizza

Your oven-roasted chicken thighs will taste lighter and smokier without having to be grilled outside. Cucumber salad or garlic rice go well with the rich tastes.

Ingredients

  1. 2 multigrain and flax flatbreads (such as Flatout®)
  2. ½ cup hummus
  3. 1 cup crumbled feta cheese
  4. ¼ cup slice red bell pepper
  5. ¼ cup sliced green bell pepper
  6. ¼ cup thinly sliced onion
  7. 1 cup shredded Colby-Monterey Jack cheese
  8. 1 pinch garlic salt, or to taste
  9. 1 pinch ground black pepper to taste
  10. 1 sprig fresh dill, chopped, or to taste

Instructions

  1. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler. Place flatbreads on a broiling pan.
  2. Broil in the preheated oven for 3 to 5 minutes. Turn the oven to 425 degrees F (220 degrees C).
  3. Top pre-baked flatbreads with a thin layer of hummus; make sure it’s a thin layer or else pizzas will be soggy. Evenly sprinkle feta cheese on top. Place bell peppers and onion on the flatbreads, evenly spaced. Top with Colby-Jack cheese. Sprinkle with garlic salt, pepper, and dill.
  4. Bake in the preheated oven until cheese is bubbly and the edges are nice and brown, 7 to 10 minutes.
  5. You can use dried dill instead of fresh, if preferred.
  6. Broiling the flatbreads first ensures the crust will be nice and crispy. The longer you cook the pizzas, the crispier they’ll be!

Wow Katie! Made these for a quick and simple lunch. Only changes; used Naan bread for crust, garlic hummus, and dried dill instead of fresh. Every bite was awesome! My husband isn’t a huge Mediterranean fan but even he said these were 5 stars! Thank you for sharing this gem!

I really enjoyed this recipe. I made the following changes I added fresh tomatoes and left out the feta and fresh dill. I think this pizza would be amazing with black or kalamata olives. A great recipe for when you want something lighter.

This was a delicious Mediterranean pizza. Honestly, I didn’t measure the ingredients; I just used what seemed appropriate. Also, I substituted yellow pepper for the green. My favorite part was the fresh dill. The aroma was wonderful, and the taste complemented the fresh vegetables.
