Mediterranean Chicken

Ingredients

  1. 2 boneless, skinless breasts of chicken
  2. 2 cloves minced garlic
  3. 3/4 cup thawed, drained frozen spinach
  4. 1/4 cup white wine
  5. 4 ounces Feta cheese, cut into 4 pieces
  6. 1 cup drained canned tomatoes, chopped
  7. 3 tablespoons Olive oil
  8. 1/2 cup finely chopped onion
  9. 1 teaspoon dried basil

Instructions

  1. Cut a two inch pocket into the thickest part of each chicken breast. Stuff each pocket with spinach and feta cheese and seal with a tooth pick. Season each breast well with salt and pepper. Heat oil over medium high heat and saute the breasts until golden brown on all sides. Remove chicken to a plate and cover with tin foil. Add onion to remaining oil in pan and cook for 2 minutes. Stir in garlic and cook for 30 seconds. Stir in white wine and bring to a simmer. Stir in tomatoes and basil. Bring to a simmer and return chicken to the pan and cover. Simmer for 10 minutes. Remove lid and season sauce to taste. Serve with butter noodles tossed with parsley.

I used artichokes for the missing ingredient, and I threw in some kalamata olives towards the end. It was very tasty. One of the best recipes I have gotten from the site regarding taste and ease. We’ll definitely do this one again!

yum. I think the missing ingredient is artichoke hearts. That’s a very mediterranean ingredient and 1 cup is an appropriate amount for the recipe. I also added thyme to the sauce, and if I’d had some I’d have simmered a bay leaf in it too.

This was a good recipe despite the fact that it was very vague. I did use tomatoes as the mystery ingredient and they worked. I also added kalamata olives which gave it more taste. We added the chopped fresh tomatoes the the buttered parsley noodles. This was a fresh and flavorful dish.

If you take a little time to read the recipe you can see that the “1 cup canned” is tomatoes…..remember they put so many great recipes on this website for us for FREE…give ’em a break! 🙂 I thought this chicken was easy & great served with couscous, the only change I made was that I topped the chicken with the feta cheese at the end instead of stuffing it.

“1 cup drained canned” because gosh! Call me a moron but for the life of me I can’t find that on any supermarket shelf!!

I made this last week for my family and some friends… they loved it! This has got to be the best recipe I’ve gotten off foodnetwork.com. I get a lot off here. Excellent and makes a great presentation for company on the plate. I served it with wild mushroom couscous and salad.
