Ingredients
- 2 pounds ground beef
- 1 small onion, finely chopped
- 1/2 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup fresh bread crumbs
- 2 eggs, lightly beaten
- Salt
- Pepper
- 2 teaspoon chili powder, optional
- 3/4 cup ketchup or tomato sauce
- 2 tablespoon mustard
- 1/4 cup chopped fresh parsley
- 4 slices bacon
Instructions
- Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Gently mound the meat mixture into a metal 9×5 loaf pan. Top loaf with 4 strips of bacon. Bake for 1 hour and 10 to 20 minutes. Remove from oven and let sit for 15 minutes before slicing.

I have made this meatloaf for 14 years, everyone that has ever eaten it has loved it! My 13 year old daughter has grown up with this recipe and for the past 4 years my now 10 year old step daughter requests this almost every week!! very good. have been using a similar recipe but I like to throw in a splash or 2 of worchesture, and now am experimenting with the addition of instant mashed potatoes, not to replace the bread crumbs altogether, but for creamy texture and optional flavor profiles. not bad so far.
My husband LOVES this recipe. I have made it too many times I think, and Im starting to get a little tired of it, lol. But it really is the best one I have found. Very easy to make as well. Takes longer to cook, for me personally though.
Move over old, bland recipes!!! This meatloaf is exceptional – definately high on flavor and nowhere near dry. I don’t include the red pepper and substitute onion power since we’re not onion fans – other than that, I do everything as the recipe states. PERFECT!!!
i was trying to find a recipe for a meatloaf that could take over my mother-in-laws horrible, dry, over cooked, gray meatloaf. I reviewed alot of recipies and decided to do this one and it won my husband over and now he wont eat his mothers anymore. so thank you
My mom never measures anything, and I cannot seem to replicate her results. This recipe is as close to hers as I’ve been able to get. My toddler loves it and so do I.
This recipe is a simple meatloaf recipe but it provides additional flavors and textures is addition to the basic meatloaf .
I started making this recipe because I wanted to find a better way to get my Son (18 months at the time) to eat a bit more meat. I have made it a dozen times since then and not only does my Son love it, but so does my Husband. Oh, I almost forgot…I HATE meatloaf until I tried this recipe. It is fantastic!!!
This meatloaf is probably the best I have ever tasted! I even made it incorrectly the first time and it was still good. It is a very easy recipe but it doesn’t skimp on flavor.
