Ingredients

  1. 1 1/2 pounds flank or skirt steak
  2. 2 tablespoons olive oil
  3. Kosher salt
  4. Freshly ground pepper
  5. 1 cup shredded provolone cheese
  6. 2 medium vine-ripened or heirloom tomatoes, sliced
  7. 1 tablespoon chopped fresh oregano
  8. 1 cup shredded mozzarella cheese

Instructions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Brush both sides of the steak with the olive oil and season generously with salt and pepper.
  3. Brush the grill grates with oil. Place the steak on the grill and grill about 4 minutes. Flip the steak, top with the provolone cheese and sliced tomatoes, season with the fresh oregano, salt and pepper and sprinkle on the mozzarella cheese. Cover and grill for an additional 3 to 4 minutes or until the cheese is melted and bubbling.
  4. Remove from the grill and let rest for 5 minutes before slicing.

I made this for my family and it was a big hit. The flavors are wonderful, especially with fresh tomatoes, and everything comes together quickly for a recipe that tastes like the weekend and as quick enough for a weekday. I like to serve this with sliced polenta and grilled vegetables.

Excellent!  Used both fresh and dried oregano…I thought that’s what was used during the episode.  I also bought thyme, but may have been confused by another show I watched on the same day.  I did cook longer than 4 minutes on the first side.  Also, it was awkward removing the meat from the grill – tomatoes and cheese wanted to slide off.  Either way, I would recommend this, and would make it again.

This did not turn out at all. Unless you want to eat a bloody piece of meat. Trying to save it. Don’t think it is going to work out.
