Mashed Sweet Potatoes with Bacon

Ingredients

  1. 3 pounds sweet potatoes (4 to 5 medium)
  2. 3 slices bacon, chopped
  3. 1 tablespoon bourbon or apple cider
  4. 1/2 cup heavy cream, warmed
  5. 6 tablespoons cold salted butter, cut into pieces
  6. 3 tablespoons maple syrup, plus more for drizzling
  7. Kosher salt

Instructions

  1. Preheat the oven to 400 degrees F. Pierce the potatoes all over with a fork and place on a baking sheet. Bake until completely soft, about 45 minutes. Let cool slightly. Split the potatoes in half, scoop out the flesh into a medium bowl and set aside. Discard the skins.
  2. Cook the bacon in a large saucepan over medium heat, stirring, until crisp, 8 to 9 minutes. Remove with a slotted spoon to a paper towel¿lined plate. Add the bourbon or cider to the drippings in the saucepan and cook until mostly evaporated, about 30 seconds. Add the potatoes, heavy cream, butter, maple syrup and 1 1/2 teaspoons salt; mash with a potato masher until smooth and warmed through.
  3. Transfer the potatoes to a bowl; top with the bacon and drizzle with more maple syrup before serving.

This recipe is amazing! The bacon grease, cream and butter combine perfectly and then topped with bacon.  I really don’t like the sugary sweet potatoes so I left out the maple syrup.

Instead of baking off the potatoes, I boiled them. Also instead of cream I used equal parts whole milk and salted butter and simmered the mixture lightly and turned of heat. Aside from. This turned into both my and my wife’s whole dinner for the night. Amazingly simple but hearty and delicious. Will be making this again soon!
