Mashed Sweet Potatoes in the Slow Cooker

With the exception of the sweet potatoes, you probably already have all of the ingredients for this dish in your cupboard.

Ingredients

  1. nonstick cooking spray
  2. 6 cups peeled and cubed sweet potatoes
  3. ½ cup butter, sliced
  4. ¼ cup water
  5. 2 tablespoons maple syrup
  6. 2 tablespoons brown sugar
  7. 2 tablespoons heavy cream
  8. 1 teaspoon maple extract
  9. ½ teaspoon ground cinnamon
  10. ¼ teaspoon ground nutmeg
  11. ¼ teaspoon salt
  12. 10 miniature marshmallows, or more to taste (Optional)

Instructions

  1. Spray the inside of a slow cooker with cooking spray.
  2. Place cubed sweet potatoes in the slow cooker. Add butter and water.
  3. Cook until sweet potatoes are soft when pricked with a fork, 4 hours on Low or 2 hours on High. Turn slow cooker off. Add maple syrup, brown sugar, heavy cream, maple extract, cinnamon, nutmeg and salt to the slow cooker and blend with an immersion blender. Garnish with mini marshmallows.
  4. If you do not have an immersion blender, you can mash the sweet potatoes with a potato masher or blend them in a blender.

So easy & delicious. I made this dish per the recipe with a few minor changes due to what I had on hand. I used skim milk instead of heavy cream. I did not have maple extract. I did not have marshmallows on hand. And I did not add salt. I kept the diced sweet potatoes in the crock pot on high for 4 hours because they did not seem to be cooking quick enough on low. Overall this recipe is super delicious. I will definitely keep it on my rotation!
