Marshmallow and Fruit Salad

When I only had a cabbage and some potatoes, I created this soup. It is quite straightforward and adaptable to your preferences.

Ingredients

  1. 1 (3 ounce) package lemon pudding mix
  2. 1 (15.5 ounce) can mandarin oranges, drained with liquid reserved
  3. 3 cups miniature marshmallows
  4. 3 bananas, sliced
  5. 1 cup sliced strawberries
  6. 1 kiwis, peeled and sliced (Optional)
  7. ½ cup chopped pecans (Optional)

Instructions

  1. Stir pudding mix and reserved liquid from mandarin oranges together in a large bowl until smooth.
  2. Stir marshmallows, banana slices, strawberry slices, kiwi slices, and pecans into the pudding mix.
  3. Chill 30 minutes before serving.

This is very good. It maybe had a few too many marshmallows, but that didn’t keep me from getting a second helping. I also liked putting just a bit of whipped cream on top. DH is allergic to kiwi, so I had to leave that out. Kiwi would have added a nice bit of color to it though.

I did not have instant lemon pudding but I did have instant cheesecake pudding. I used that instead. I did add in one more cup of chopped strawberries and two more chopped kiwi. This is a very nice fluffy salad–the kids and I loved it……..I can’t stop eating it. This is even better if it sits overnight, if you can wait that long to dig into it.
