Marlene’s Yogurt Berry Smoothie

a little bit dense and loaded with blueberries. In this recipe, I’ve used unfed sourdough starter trash, but you may instead use active sourdough. Active sourdough will result in somewhat fluffier muffins.

Ingredients

  1. 1 cup soy milk
  2. 2 tablespoons flax seed meal
  3. 1 cup Greek yogurt (such as Chobani®)
  4. 1 cup fresh strawberries
  5. ½ banana
  6. 3 ounces baby carrots, cut into chunks
  7. 1 tablespoon flaked coconut
  8. 1 cup frozen blueberries

Instructions

  1. Pour soy milk and flax seeds into a blender. Allow flax seeds to soften, 1 to 3 minutes. Turn blender on and add yogurt, strawberries, banana, carrots, and coconut, blending well after each addition. Add blueberries and blend until smooth.
  2. Substitute almond milk for soy milk and chia seeds for flax seeds. Substitute or add fresh spinach or other vegetables. Use your favorite berries or combination of berries.

Tasted ok and I’m sure it’s healthy but the carrots or flax or something in there made it grainy instead of smooth!

I love this smoothie. The 2nd time I used half cup skim milk; half cup vanilla Greek yogurt; whole banana; and added 1 tablespoon chia seeds plus 1/4 cup oatmeal.

I really enjoyed this. I subbed almond milk for the soy milk, and a handful of almonds in place of the flax seed meal. Other than those adjustments, I followed the recipe. Super yummy and filling. Will make again. Saved to my recipe box! Thanks.
