With a hint of sweetness, a hint of flavor, and a hint of heat, this marinade elevates grilled flank beef to a new level.

Ingredients

  1. 1 ½ cups mango nectar
  2. ¼ cup soy sauce
  3. 1 tablespoon granulated garlic
  4. 1 tablespoon habanero hot sauce
  5. 1 pound skirt steak

Instructions

  1. Mix mango nectar, soy sauce, garlic, and hot sauce in a bowl. Add steak and marinate for 8 hours, or overnight.
  2. Preheat an outdoor grill for high heat and lightly oil the grate.
  3. Grill steaks until they are beginning to firm and are hot and slightly pink in the center, 4 to 5 minutes per side for medium. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  4. Remove from grill, cover, and allow to rest for 2 minutes. Cut steak across the grain and serve.

I really liked the marinade and will use it on other meats….I had a hard time finding skirt steak so, I used flank steak instead. The only thing different I would do is add a little salt and pepper to the steak.
