Ingredients
- 1/2 cup plus 2 tablespoons unseasoned rice vinegar
- 2 tablespoons soy sauce
- 4 teaspoons sugar
- 4 teaspoons sesame oil
- 2 English cucumbers, thinly sliced on a mandoline
Instructions
- Combine the vinegar, soy sauce, sugar, oil and 1 tablespoon water in a medium bowl and whisk to combine. Add the cucumbers, cover, and let marinate in the refrigerator for at least 1 hour. Serve chilled.

Love almost everything VB makes (out of all of the following “chefs” on FN). Made her blackened catfish (with Cod and jalapeño slaw tonight. 5+). Maybe my daughter added too much sesame oil – but she repeated it back to me per the recipe. Way too much sesame oil for our taste. We tossed the leftovers. Sorry VB! But you are still the bomb!

Really good! I added sliced sweet onions & quartered cherry tomatoes! Awesome! Hardly any leftovers, except enough for me tomorrow!
Loved this. I did add tomatoes and thin sliced onions and added toasted sesame seeds and a little feta. I was a bit skeptical with that much sesame oil but People loved it. Definitely making again and again.
I love the idea of using soy and sesame oil but it seemed very lackluster in flavor. Followed it carefully. I think it would benefit from freshly grated ginger and perhaps more soy

This recipe turned out great and all my guests loved it. Added a half red onion to it for some additional taste which worked out nicely. Some of the other reviews made me nervous on the sesame oil so I started with half of what was suggested but then ended up tasting and going with the actual recipe which didn’t overpower it and tasted great. Was a perfect accompaniment to a very heavy barbecue dinner.
