Ingredients
- 1 cup water
- ½ cup distilled white vinegar
- ¼ cup vegetable oil
- ¼ cup sugar
- 1 teaspoon salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- 3 cucumbers, peeled and sliced 1/4-inch thick
- 3 tomatoes, cut into wedges
- 1 onion, sliced and separated into rings

- Gather all ingredients.

I have made this salad for over 60 years. I have always used apple cider vinegar instead of white vinegar. I think it just has a more complex flavor and marries better with tomatoes. This time, I used different color cherry tomatoes cut in half. Changing the type of onion used (Vidalia versus red versus white versus yellow) also changes the flavor of the salad. I always cut the onion rings in half as the salad is easier to eat with smaller pieces.
I tweaked it a bit. I used apple cider vinegar and lots of red onion. It’s delicious.

Cucumbers, tomatoes and onions do not come in uniform sizes. I would really like a recipe that tells me the amount of an ingredient I need in grams (I’m in the U.S. and native to the U.S.). Some cucumbers are more than 5 times larger than other cucumbers and that’s not even getting into extremes. I used: 7 small Campari tomatoes 1 large English cucumber 1/2 a medium red onion I subbed a fancy-ish white wine vinegar because I don’t use plain white distilled vinegar for anything but cleaning. Ended up topping up to about 1C of white wine vinegar because this recipe is SWEEET.
I followed the recipe above with the exception of sugar. I used stevia instead.

Absolutely delicious! I used red onion, and 1/4 c. Apple cider vinegar and 1/4 cup white vinegar. Fresh vehes from the garden ! Yummy!!!!

This is an easy to make and very delicious salad to eat. Do wa nt to try it with vegetable oil and distilled white vinegar next time to see if it has a different taste. I used olive oil and red wine vinegar this time.
I make this salad all through the summer. It’s my favorite and just says “summer” to me. Over the years I’ve stopped using regular vinegar and sugar and now just add seasoned rice wine vinegar.
I used diced red onion, half a large cuke diced with some skin left on, cherry tomatoes, white wine vinegar, sugar, oil, and freshly ground pepper as per the recipe. It turned out fantastic! Thank you! I have been looking for a great quick pickling recipe for years, and this is it! It’s even better than my Mom’s recipe.

This is a summer favorite! The only way I throw it together now is cukes, red onion and summer’s best tomatoes. I salt them and squeeze fresh lime juice all over them!! Simple and stunning!
Love this (though I used apple cider vinegar). I’ve been keeping a big box of it in the refrigerator and just keep adding cukes, tomatoes and onions to it, refreshing it with additional vinegar-sugar etc every once in a while! Yummm!
Our family loves this salad on those hot summer days when the farmer’s market is overflowing with fresh cucumbers and tomatoes. I do not any water in the marinade. We like the tang of vinegar (I have tried every variety and slightly prefer apple cider vinegar), a vidalia onion, pickling cucumbers, and any tomatoes as long as they are super ripe and fresh. I always save use up the leftover marinade. It is delicious. Sometimes I add fresh corn (lightly boiled) at the last minute. More crunch!

This was a fantastic, fresh and delicious salad which I served as a side dish for an Asian inspired pork dish with coconut rice. It was perfect but would suit so many dishes. Delicious and so easy to prepare. My only change was to add some sesame oil and cider vinegar.
This is the second time in two weeks I’ve made this. This next weeks temps here in the Midwest are going to be in the 90s and 100s! This salad is cold and delightful on a hot day!
Made with corn oil and 14 teaspoon more sugar. It was delicious.
