Marinara Sauce

Ingredients

  1. Olive oil
  2. 3 to 4 whole cloves garlic, minced
  3. 1 whole small to medium onion, chopped
  4. 1/2 cup white wine (or chicken broth)
  5. Three 15-ounce cans crushed tomatoes
  6. Salt and ground pepper
  7. Pinch sugar
  8. Fresh parsley leaves
  9. Fresh basil leaves

Instructions

  1. Add a tablespoon or so of olive oil into a hot pan over medium-high heat and throw in the garlic and chopped onions and give them a stir.
  2. Now add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
  3. Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
  4. Toward the end of the cooking process, chop up your fresh parsley and basil and add it to the sauce to taste, stirring to combine.

I read the reviews and added a tablespoons of tomato paste to the recipe and simmered longer since I had the time. I used this to bake meatballs and am looking forward to having the leftover sauce with pasta. I will keep this recipe in rotation.

A decent marinara sauce does not need sugar. If that’s what you want, just buy a jar of Ragu. If you want a good marinara sauce, look at the recipes by Giada primarily, since she specializes in Italian food, but Barefoot Contessa (Ina Garten) also has a good marinara recipe.

Excellent  sauce w/ a rich tomato flavor.  It is a bit on the thick side, so I may add a bit more wine the next time.  I did add 1/8 tsp red pepper flakes to give it a little kick which worked perfect for us.  We loved it and I’ll certainly be making it again.  Thank you Ree!

I feel she should add tomato paste. It gives it more ‘tomato’ flavor. Especially if using chicken broth which will dilute the sauce.

Family approved!  Everyone liked it and the recipe made it to the “make it again mom” recipe box.  It was very easy to make, especially for a beginning “from scratch” sauce maker as myself.  Enjoyed the flavor as well as the simplicity of the recipe.

This was delicious! I added fresh meatballs to the sauce and it was fabulous! Fresh is the best word I could think of to describe this sauce. I think it is important to note that I used San Marzano tomatoes which I think makes a difference. Thank you are!
