Ingredients

  1. ½ teaspoon lime zest
  2. ¼ cup lime juice
  3. 2 tablespoons gold tequila
  4. 2 tablespoons honey
  5. 1 tablespoon vegetable oil
  6. 2 teaspoons cornstarch
  7. ¼ teaspoon garlic salt
  8. ¼ teaspoon ground black pepper
  9. 4 skinless, boneless chicken breast halves
  10. 4 (10 inch) flour tortillas, warmed
  11. 1 tomato, cut into 8 wedges
  12. 1 avocado – pitted, peeled, and cubed
  13. 1 lime, cut into 8 wedges

Instructions

  1. Preheat oven to Broil.
  2. Combine the lime zest, lime juice, tequila, honey, oil, cornstarch, garlic salt and pepper in a small saucepan over medium heat. Bring to a boil, stirring, to thicken the sauce.
  3. Broil chicken breasts for 10 to 15 minutes, or until cooked through (no longer pink inside). Baste with prepared sauce for last 5 minutes of cooking time.
  4. To serve, arrange a folded tortilla on each of 4 plates; add a chicken breast, 2 tomato wedges and some avocado chunks. Drizzle chicken with remaining sauce and garnish with 2 lime wedges.

I did make some changes to this recipe. I just felt it lacked some ingredients. First off, I doubled the ingredients for the sauce. After heating the sauce I set it aside. Next I fried a couple of strips of bacon in another frying pan. After removing the bacon I sautéed an onion, a red bell pepper, a green bell pepper and cilantro in the drippings. Also I grilled the chicken along with wood chips to give it a smokey flavor. With five minutes remaining on the cook time I removed the chicken from the grill. I placed a sheet of foil on the grill then put the chicken back on top of the foil. I then basted with some of the sauce. I then added all of the sautéed ingredients along with some fresh diced tomatoes to the remaining sauce and stirred until hot. I did add a small amountof water to thin the sauce. Next step was to remove the chicken and top with the sauce. Add the diced avocado and serve with Spanish rice and seasoned pinto beans. (I dislike black beans) This dish was sooo good!! I will definitely make this again!!

WE really liked this recipe. I did add some cilantro to the marinade and grilled instead of broiled it. I boiled the marinade and reduced it by half and drizzled it on the chicken. I also added some chunks of onion and red & green bell peppers to the marinade and grilled them also. I’ve already make this twice and will be making it again tonight!

I doubled the sauce recipe and it was so tart we could barely eat it. I also used leg & thigh meat, which was a whole lot of work for not much difference. So I’d skip that. I loved the combination though and will try it again and not double the lime juice.

Yes, I would try it again. Very tasty. Tried to broil in toaster oven. Tough. Not sure if it was the Walmart chicken. Served it with baked potato and veggies and double the sauce.

My family loved it! Next time I’ll add a little less honey and a little more lime and tequila. I doubted the sauce recipe this time just because we are “sauce people” – and we grilled the chicken like others had suggested (I’m not super broiler comfy!). It was excellent!! This was so good, and super easy to make on a weeknight! I actually ended up cutting up the chicken after broiling it, and poured the remaining sauce over it to make a taco filling. Then I served it in the shell with black beans, rice, red onion, tomato, and avocado. It was delicious!
