Ingredients
- 1 head romaine lettuce – rinsed, dried and chopped
- 2 (11 ounce) cans mandarin oranges, drained
- 6 green onions, thinly sliced
- 2 tablespoons white sugar
- ½ cup sliced almonds
- ¼ cup red wine vinegar
- ½ cup olive oil
- 1 tablespoon white sugar
- ⅛ teaspoon crushed red pepper flakes
- ground black pepper to taste
Instructions
- In a large bowl, combine the romaine lettuce, oranges and green onions.
- Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
- Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
- Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

So good! I used spinach instead of romaine and splenda instead of sugar. Also added cranberries. YUM!
this salad is always a huge hit – the only thing I change is using Ken’s lite poppyseed dressing – really good!!!

What a fantastic dish! The entire family really enjoyed this recipe. There were requests for seconds! I believe you should follow the recipe exactly the first time that you make the dish. Thereafter, you can make you changes. Don’t forget once you make changes you are no longer making the dish that you selected. Instead you are making your version. I cannot wait to make this dish again for the family.
Excellent! I do use less oil for the dressing, but this is my FAVORITE. Just the right crunch, sweetness, and tang.
Very good recipe. There was too much dressing so I added a second head of lettuce and cut back the olive oil to 3/4 of what the recipe called for. The almonds were such a delightful surprise!
This salad was really good. I read the recipe and reviews and it sounded good. I added an avocado that I had on hand. I also added a splash of balsamic vinegar to the dressing. It turned out great. Loved it!
Great salad! The only change I did was to use Balsamic vinegar instead of red wine vinegar.

Delicious….watch the almonds as they cook, they get brown very quickly!! Dressing was delicious, and after reading others comments will try adding more fruit as well. Really a pretty and classy looking and tasting salad!!!
No changes and tastes like not much of anything. A bit of citrus from the madarins. A bit of a bite from red pepper flakes. Wouldn’t make again.
Love the flavor combo but I think I will cut down on the amount of oil next time (perhaps cut it in half). Otherwise, really good salad and well received by others. Thanks for sharing your recipe!
I gave it a 2 stars, hubby gave a 4. It was ok, but didn’t like the oil & red wine vinegar dressing. We’ll make it again but use some other type of dressing I think.
My “go to” salad. Everyone loves it! Have used blueberries, apples and strawberries and all were great. Even picky teens will eat it.
I tried this recipe for a quick lunch, but didn’t have almonds or green onions. I made as is, and added bacon bits and blue cheese. Very tasty. Will make again.

This was just yummy all the way around. I didn’t have the leaf lettuce, instead I used a prepacked salad mix. This was light yet filling. My husband who is a picky eater like it too!
Just a suggestion for an alternative to the salad dressing – my mom’s been making this for years and she simply uses an italian dressing – great tang with the sweet from the mandarin oranges and sweet almonds.
This was absolutely delicious! I used a spring mix/spinach combo, ditched the onion and added a few craisins and feta cheese. It looked beautiful and the taste was out of this world. Thank you!
For being so simple this salad was fantastic!! This was a great way to use up the last of my garden romaine and I will make this time and time again!
