Ingredients
- 2 tablespoons butter
- 1 1/2 cups white rice
- 3 cups chicken stock
- Handful flat-leaf parsley, finely chopped
- 1 cup grated Manchego cheese
- Salt and pepper
Instructions
- Melt butter over medium heat in a medium sauce pot. Add rice and toast in butter 2 minutes. Add stock and bring rice up to a boil. Cook rice 17 to 18 minutes until tender and liquids are absorbed. Remove from heat, fluff rice with fork, then stir in the parsley and cheese. Season the rice with salt and pepper, to taste.

Whole family loved it. Had to sub manchego for a parm/feta mix due to cost.
I think this is amazing and easy. For those that thinks it’s gross, try changing the cheese to cheddar. Manchego isn’t everyone’s cup of tea.
Starchy, gooey, heavy, yucky. If you’re looking for a heavy entree, similar to risotto, then maybe. Otherwise, skip it.

VERY TASTY! LOVED IT! I DID HAVE TO COVER IT THOUGH. THE RECIPE DOESN’T STATE TO COVER IT BUT MY RICE WAS NOT FLUFFING UP SO I DID. IT WAS DELICIOUS!!! AND LIKE MOST PEOPLE SAID, THE CHEESE WAS PRICY BUT IT WAS WELL WORTH IT!!!
This was an off-the-cuff recipe search for a quick side dish to my grilled pork chops (I didn’t even know that it was coupled on an episode). I didn’t have parsley or manchego cheese, so I substituted scallions and “fiesta blend” cheese from my market. The recipe is very easy to make and it was EXACTLY the taste and texture I was looking for (I covered it while simmering the rice, even though the directions didn’t say to). It’s got a great mild flavor that isn’t overpowering, even with the scallions in it. My family is digging in and devouring it right now….tons of “mmmm”s and “oh so good!”s. Definitely an addition to my recipe book!
The title should say it all… I have been really persnickety when it comes to food this time around. I didn’t buy Manchego Cheese because it was just too expensive (I didn’t even look for it… my comment about expense was based on the other reviews), so I used the store brand “Fiesta Blend” and it works just fine. If anything, it’s a tad bland, but easy enough to season it up if you so desire. Try using garlic salt.
This wis a very simple yet very tasty rice. The cheese is very expensive but it was worth it.
I liked, my son loved, my husband said “ok, I guess”, my daughter hated. I won’t be making again. Pork chops were awesome.
I grew up in Hawaii so plain white rice is fine to me but my family hates rice so I have to give it some flavor if they’re going to eat it. Tried this last night and this is awesome (yes, Manchego is pricey – $16.99/lb here in FL) but even my daughter who says everything sucks actually said this was the best rice ever. My wife loved it too!
