These are considered to be the first pancake. Add some maple syrup and serve them warm. They go by the name “hoecakes.” Serve warm with butter and honey.

Ingredients

  1. 4 eggs
  2. 1 ¼ cups white sugar
  3. 1 ⅛ cups butter, melted and cooled to lukewarm
  4. 1 pinch salt
  5. 4 cups all purpose flour
  6. 1 ½ teaspoons grated lemon zest
  7. 2 egg yolks, beaten
  8. seasonal colored sprinkles

Instructions

  1. Whisk the eggs in a large bowl. Blend in sugar and beat until mixture is thick and pale, about 10 minutes. Mix in the melted butter and salt. Gradually fold in the flour and lemon zest. Cover and refrigerate for at least one hour or, preferably, overnight.
  2. Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheet.
  3. On a floured surface, roll out dough to 1/4 inch thickness. Cut into desired shapes using cookie cutters. Place cookies on prepared cookie sheet. Brush with beaten egg yolks and decorate with sprinkles.
  4. Bake in preheated oven until golden at the edges, 15 to 20 minutes. Cool cookies on racks.

Very good! Had a nice lemon twist to otherwise fairly bland sugar cookies. Loved the unique taste! Next time I would’ve used a little more sugar.. just to make it less bland. But they were really good.Made them for my French class!

This recipe made light tasting cookies, great for tea, but I wouldn’t know since they don’t last that long! Added a glaze of lemon juice, vanilla, and powdered sugar.

Loved these!!! I made these with my Girl Scout Troop for Thinking Day! They were hard to roll out at first. I made a double batch and made most of these up with the girls helping. We ran out of time and I had to finish the next day with my Daughter. It was so much easier after being in the Fridge overnight – Will add this recipe to my Holiday collection -already decided to use this as Teacher gifts Christmas 2011!!
