Ingredients
- 4 6-ounce skinless mahi mahi fillets (about 3/4 inch thick)
- Kosher salt and freshly ground pepper
- 4 tablespoons unsalted butter
- 1/2 head cauliflower, florets cut into 1/2-inch pieces
- 1/4 cup sliced almonds
- 1/4 cup golden raisins
- 1/4 teaspoon ground coriander
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Preheat the oven to 375 degrees F. Season the fish with salt and pepper. Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Sear the fish until golden brown on one side, about 3 minutes. Transfer to a rimmed baking sheet, cooked-side up, and roast in the oven until just cooked through, about 10 minutes.
- Meanwhile, melt the remaining 3 tablespoons butter in the skillet over medium-high heat. Add the cauliflower and cook, stirring, until golden brown and crisp-tender, about 6 minutes. Add the almonds, raisins, coriander, 1/4 teaspoon salt, and pepper to taste; cook until the almonds are golden, about 2 minutes. Remove from the heat and stir in the lemon juice and parsley.
- Divide the fish among plates and serve with the cauliflower and lemon wedges.

Followed recipe as written. Paired it with steamed green beans and a simple spinach salad. If I ever have this particular combination of ingredients on hand, I would make this again.

Excellent! Used craisins instead of golden raisins and it was so tasty! Also the market had no mahi-mahi so I used halibut instead and it was still delicious!
This was amazing – I followed the recipe and cooking instructions – it was so easy to make. I only substituted the almonds for chopped walnuts because that’s what I had in the pantry – and it was amazing. I also baked a sweet potato for the side. The fiancé loved it and has asked for it again!! Whoo hoo! 🙂 two very enthusiastic thumbs up. Yum yum.
Relatively easy. The almonds took a bit longer than 2 minutes to brown up. The raisins made it nice and sweet and paired nicely with the fish.
I am a diabetic. This has become a regular meal at our house and is helping me control my glucose levels.
This just did not come out right. I didn’t have Mahi so I used flounder instead; maybe that was my mistake. Some of the smaller pieces must have overcooked because the bigger pieces looked just fine. I placed the fish on a bed of greens, white rice, and the cauliflower. The first bite I took, the fish was very mushy and the texture was awful. I asked my family if they liked it and said it was okay. Needless to say, I couldn’t stomach my plate and opted for a sandwich instead. I will not be making this, at least anytime soon.
This is quick, simple, and elegant. Perfect for company or just a great solo meal. I doubled the raisins and sliced almonds.
Very fast and delicious!
