Easy and delicious! I prefer to make cookies from scratch but this recipe is a great time saver during the Holiday madness. Served them on Christmas Eve and everybody loved them. Even the teenager who doesn’t like coconut. Maybe I forgot to tell him there was coconut in them (-;

My boyfriend said he could live off of nothing but these bars! While I’m a huge advocate of making everything from scratch, when it gets down to a few days before the holidays and you’ve been doing nothing but bake, an easy, delicious cookie like this is a blessing! I used Betty Crocker sugar cookie mix and it took about 2 minutes to assemble, you can’t ask for an easier recipe! Anyone who likes coconut will be a fan of these, I’m about to make my second batch for last minute gifts!

Not awful but pretty close. Was a waste of time to use a packaged mix – it tasted like a mix. I served these with a chocolate fondue thinking they would be fantastic but they were not good with or without the chocolate fondue.

Out of all the dessert recipes I’ve followed, this macadamia coconut cookie bar recipe takes the cake for my boyfriend.
Tonight, I’m making them to top off his birthday meal (tomorrow night).
Along with his compliments, i’ve brought these to a baby shower and several family dinners and from those events have had countless requests for the recipe. And not to mention, never having any leftover.
It’s simple, has just a few common,key ingredients along with other basics, a short bake time and the magic has been worked.
I can’t rant about this one enough!

I haven’t made these yet. Just wanted to give a substitute for the macadamia nuts. Try chopped brazil nuts.

I loved that these cookies were so easy to bake, I didn’t love the fact that they were so sweet. If you don’t mind a really sweet dessert, this recipe will work for you. Personally, I won’t be making them again.

My 2 favorite recipe. These bars are so good and easy to make. Chewy and moist as well. Macadamia nuts..a little pricey, but so worth it. They would be great to bake and take wherever. My family enjoyed them..and they are not coconut fans.

These are awesome! Could not find macadamia nuts at my neighborhood store so I substituted mixed nuts for baking and chopped them. These are also great crumbled over vanilla ice cream when warm!!

I was good but not my fav!

This was nice and easy with a good outcome! I wouldn’t say it was over the top, but a keeper none the less. Really good for that quick potluck.
