Lumpia Sauce for Fresh Filipino Lumpia

My mom made this recipe. The seasoning amounts are ‘to taste’ estimations because she never recorded anything. She proclaimed that “love” was the essential component.

Prep Time: 5 mins
Cook Time: 15 mins
Total Time: 20 mins
Servings: 16
Yield: 2 cups

Ingredients

  1. 1 tablespoon olive oil
  2. 3 cloves garlic, crushed
  3. 2 cups water
  4. 2 tablespoons creamy or crunchy peanut butter
  5. 2 tablespoons brown sugar
  6. 2 tablespoons corn flour
  7. 1 tablespoon soy sauce

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes.
  2. Mix water, peanut butter, brown sugar, corn flour, and soy sauce together in a separate small saucepan until well blended and no lumps remain. Bring to a boil. Cook and stir until mixture is thick, 6 to 10 minutes. Add the cooked garlic and mix well.

Following the recipe, this was extremely bland. I added another tbs of peanut butter and 2 tbs of honey and finally achieved a somewhat decent sauce. Sorry that we did not care for this recipe as written.
