LT Guacamole Burger

Ingredients

  1. 7 ounces ground prime beef (20 percent fat), at room temperature
  2. Softened butter
  3. Kosher salt and freshly ground black pepper
  4. 3 slices cheddar cheese, preferably Mecox Bay Dairy Cheddar
  5. Potato bun, sliced in half
  6. Iceburg lettuce leaf
  7. Slice beefsteak tomato
  8. Slice dill pickle
  9. 1 tablespoon LT Guacamole, recipe follows
  10. 2 Haas avocados, scooped
  11. 1 seeded chopped jalapeno
  12. 3 tablespoons chopped red onion
  13. 2 tablespoons diced tomato
  14. 1 tablespoon chopped cilantro
  15. 1/2 tablespoon fresh lime juice
  16. Splash of Green Jalapeno Pepper Tabasco
  17. Salt and pepper to taste

Instructions

  1. Heat a griddle medium hot.
  2. Using your hands, form the beef into a 1/4-inch-thick patty, trying not to press the patty too much or the meat becomes tough and the patty does not cook properly in the center. Brush some butter on both sides of the patty, season with salt and pepper and cook on the griddle for 2 to 3 minutes. Flip the burger, place the cheese on top and continue griddling for 2 to 3 minutes for medium rare.
  3. Meanwhile, brush softened butter on both slices of the bun and place on the griddle until toasted.
  4. To assemble, place the hamburger on the bottom slice of the bun, and the lettuce, tomato and pickle on top of the hamburger. Spread the LT Guacamole on the top bun and then put the sandwich together and serve.
  5. Mash the ingredients together in a medium bowl.

Where is the recipe for the pickle mayo???

I tried to remember this recipe off the top of my head while I was at the store buying ingredients. I forgot the cilantro and Jalapeno Pepper Tabasco, I also neglected to incorporate tomato. I did however make this with half of a serrano pepper, little bit of fresh garlic and the remaining ingredients. It was WONDERFUL. We did put it on our burgers along with some muenster cheese. Very simple and very delicious. Next time I will follow the recipe and hopefully get the extra little kick I thought it was lacking.

This review is for the guacamole only. Wonderful recipe! Always looking for little variations on the guacamole standby. I also added just a splash of Worstershire Sauce at the end, makes it even better.
