Low-Sugar Raspberry Jam

You would never guess that this raspberry jam is low in calories and sugar while still being sufficiently sweet and tart. Pour it over ice cream, add it to milkshakes or smoothies, or spoon it on toast with Neufchatel cheese. Ensure refrigeration.

Ingredients

  1. 1 (6 ounce) container fresh raspberries
  2. 1 tablespoon sugar-free raspberry syrup (such as Torani®)
  3. 2 tablespoons white sugar
  4. 6 packets stevia sweetener (such as Truvia®)
  5. 1 teaspoon freshly squeezed lemon juice

Instructions

  1. Place raspberries in a small pot and mash with a potato masher. Add syrup and bring to a boil. Stir in sugar and stevia. Reduce heat to low and simmer until thick, stirring constantly, 10 to 12 minutes. Remove from heat and stir in lemon juice.
  2. Add an additional 2 to 3 packets of Truvia(R) for a sweeter jam.

Excellent! I served this with popovers hot from the oven. Could have made a meal with only that. No changes, followed the recipe.
