My substitution for the shrimp in Ruby Tuesday’s New Orleans Seafood. This is the result of my combining several different recipes. It’s fairly close! My husband, my kid, and I can generally get by on three fillets. In order to truly replicate Ruby Tuesday’s recipe, I serve this with rice and steamed broccoli.

Ingredients
- 2 pounds lean ground turkey
- 1 pound lean ground beef
- 1 onion, minced
- 1 carrot, shredded
- 2 cups chopped fresh spinach
- 1 large egg, beaten
- 3 tablespoons taco seasoning mix
- 3 cloves garlic, minced
- 2 teaspoons ground black pepper
- 3 drops ketchup
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Place turkey and beef in a large bowl. Add onion, carrot, spinach, egg, taco seasoning, garlic, pepper, and ketchup. Mix with your hands until blended. Shape into 3 equal-sized loaves and place into a 9×13-inch baking dish.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Feel free to substitute any chopped vegetables you and your family love.

This meatloaf is unique. I enjoyed the mix of Turkey and beef as well as the vegetables packed in it. The taco seasoning is a unique add. Without a sauce on top, I felt like it should have been crumbled and put in a tortilla because it just tasted like taco meat. I made a sauce to go on top of the meatloaf that really made this recipe awesome. Here is what I used: 1/2c ketchup, 1/8c to 1/4c Heinz 57 or A1 (depends on your taste preference), 1/2tsp liquid smoke, and 1/2tbsp Dale’s or Moore’s marinade. With the sauce, this is a great way to get the family to eat more vegetables and I would definitely recommend it.
