Ingredients
- 2 (14 ounce) cans chicken broth
- 1 (8 ounce) package cream cheese
- 1 cup shredded Cheddar cheese
- ¼ cup butter
- 1 tablespoon minced onion flakes
- 1 pint heavy whipping cream
- 1 (10 ounce) can chicken chunks, or more to taste
- 3 heads broccoli, broken into florets
Instructions
- Combine chicken broth, cream cheese, Cheddar cheese, butter, and onion flakes in a large pot over medium heat; cook and stir until smooth, 3 to 5 minutes. Add heavy cream and chicken; bring to a gentle simmer.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 4 to 5 minutes. Transfer to a colander to drain excess moisture.
- Pour chicken broth mixture into a slow cooker; add broccoli.
- Cook on Low until flavors combine, about 4 hours.
- Frozen broccoli can be used but I find it too strong.
- This soup can be eaten right away but it’s much better if it’s cooked in the slow cooker for several hours to allow the flavors to blend.

This was wonderfully flavored! So smooth and creamy. I did add some additional spices to fit my family’s taste. This is very versatile too. I added some button mushrooms and carrots, used some minced onion but also added real onions and cooked them until clear. Turned out wonderful! However I would agree with another reviewer that it makes very small portions so adjust accordingly. This ones a keeper! Thanks for the recipe!

Best Broccoli Cheese Soup I’ve ever made, possibly the best I’ve ever eaten. Whole family loved it. I doubled the recipe but didn’t add enough Broth (only 32 oz.) my bad. I also substituted fresh chicken breasts. I cooked 3 chicken breasts in the broth first then removed and shredded them. Set aside and continued cooking as originally directed. Even with my mistakes and changes, It still came out awesome. My only problem was trying to count the carbs and calories per serving for my diet, but that’s on me. I will be making this soup a lot in the future. Top notch recipe.
Just made this for supper. It was the best Cream of Broccoli soup that I’ve had. Creamy, rich, tender broccoli. I didn’t use the chicken but will make this a favorite especially this fall. I added more cheese too. I like the broccoli tender and don’t use the tough stalks.
First off, this was AMAZING! I actually added some little things of my own and it came out perfect for me. I seared chicken instead of adding it from a can (seasoned and seared). I also omitted the onion flakes but added onion and garlic powder, salt and pepper, and I used two bags of steamed broccoli! One of the bags had cauliflower in it as well and as a cauliflower hater, I thought it would be ruined. It went so well with this soup that I might rethink my stance. 10/10 and I’m definitely making again!
My oh my this soup was incredible! So filling and delicious. I made it on the stove as opposed to a slow cooker and steamed the broccoli and the stems-waste not, want not : ) I also sauteed fresh onions and garlic in the pan prior to adding my homemade chicken stock & cream cheese. I omitted the chicken since I was roasting one that day for dinner and didn’t want it in my soup also. I pureed the soup using an immersion blender to break up the majority of the broccoli but still left some larger chunks for texture. I couldn’t eat more than 1 bowl & my daughter was only able to eat 1 as well. There’s still enough for 4-5 more bowls, and with how filling this is, that’s plenty! I will definitely be making this again!
Good but too milky for me. Doubled the cheese which didn’t seem to help. Doubt whether I’ll make it again.
Came out great! Only change I made was the chicken, I used pulled rotisserie chicken. Oh and I added a bit more cheddar
I’m not very “good” at following recipes since I tend to make lots of substitutions based on what I have at hand and feel like putting in. For this recipe, I omitted the chicken and beef broth (I’m a pescatarian), as well as the whipping cream and onion flakes (didn’t have them). Instead of beef bouillon, I used vegetable bouillon, and instead of the cream, I used about a cup of tofu (mixed in a blender). I seasoned it with fresh-ground salt and pepper and after letting it simmer in a regular pot over stove for about an hour, I put it all in a blender and got a nice, even texture. I prefer a creamy texture to chunks in my “cream of blank” soups. Turned out yummy!
Good keto soup! Texture a little different but the flavor is great. I omitted the chicken but added a little chopped ham before serving. Used frozen chopped broccoli.

My bride and I are on the keto diet. She returned to university for another degree so I do a lot of the cooking. This soup is too easy and won for me lots of hugs. The only extra I did was steam the broccoli stems, puree them and add that to the soup. Thought of adding xanthan gum as a thickener but didn’t need to. This soup is gonna be a regular for us this winter.

Was a personal chef for a couple who were on keto. They had me make a double batch of it EVERY week! For five weeks straight. Suffice it to say it’s a great recipe.
Great recipe! I threw everything but the HWC, broccoli (Frozen), chicken, and cheese in to my instant pot on sauté until cream cheese and butter was smooth. Once smooth, I tossed in the chicken and broccoli and pressure cooked for 13 minutes. After I released pressure, I put it back on “sauté” and tossed in the HWC & cheese (I used 1 cup). At no fault of the original recipe, my broccoli was mush which I did not want. I wanted it lightly steamed for this recipe. It was so mushy that it basically blended in with the liquids. To fix it, I just steamed some broccoli for a couple of minutes in the microwave and tossed it in! It was great! I ate 2 bowls myself and it was VERY filling. I added a little Parmesan and a little franks red hot sauce to mine 🙂 . And while the canned chicken was good, especially if you are on a time crunch, I will probably use fresh chicken next time. Also, I made this scaled at the original recipe and I agree with other reviewers that it doesn’t make as much. My daughter and I ate 2 reasonable sized bowls each and there may be enough left for 3 bowls.

As is, this recipe is great! Good for keto dieters like myself. I sometimes make myself a pot on Sunday for my lunches during the week. I do cook down some chopped sweet onion and fresh garlic in butter and add in rather than onion flakes and have tried adding velveeta as well. Yummy.
Really loved this soup. Low carb and delicious. Next time I am adding one-half extra on heavy crème and chicken stock. I live my soups brothy and I lost some in the cooking.
