Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 pounds broccoli, chopped
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 5 cups vegetable broth
- ¼ cup freshly squeezed lemon juice
- ¼ cup shredded Cheddar cheese, or as desired (Optional)
Instructions
- Heat oil in a large pot over medium heat; once the oil is hot, reduce heat to low. Cook and stir onion and garlic in hot oil until softened, 3 to 5 minutes. Add broccoli, season with salt and pepper, and stir. Pour vegetable broth and lemon juice into the pot.
- Loosely cover the pot and simmer the mixture until the broccoli is tender, about 25 minutes. Puree with an immersion blender until smooth. Garnish with Cheddar cheese to serve.
- Cook’s Note:
- If you don’t have an immersion blender you can also use a traditional blender, but BE CAREFUL AND DO THIS IN SMALL BATCHES! The heat and steam could cause your blender’s top to fly off and leave you burned and messy. I know this from experience with another soup.

I followed this wonderful recipe with the food we had on hand. So, I sauteed two large chopped onions, and two quarts of sliced mushrooms which were added to the broccoli in the boiling pot and all treated to the immersion blender. Then added maybe a generous amount of her cheese and a pound of diced quality deli ham. Mmmm good.
This is delicious! I’m not a big broccoli fan but this soup is awesome! I halved the recipe and found the amount of lemon juice to be perfect. I did add more veggie broth so my wand blender would work better. Will definitely be making this again!
I loved this soup. I made it in the crockpot, on high for about an hour then on low for a bit. I didn’t have lemon juice so I used lime juice and it worked fine. I also doubled the salt. I added a dash of paprika and a dash of chili powder. I also chose not to purée the soup, and leave it chunky. I preferred the texture this way, and it kept the soup feeling light. It is so tasty. I kept it low carb, but you could add some rice or pasta to this soup and it would be nice.
I added a few tablespoons of lime juice rather than the lemon juice. Also added a stalk of celery and a carrot. We loved it!
I made some changes to this recipe because it didn’t seem hearty enough. I added chicken, cream, and cheese after cooking the broccoli and onion in a slow cooker for four hours. I found it more filling and flavorful after. Fair warning, when you cook just the broccoli and onion it smells really bad. It smelled and tasted better after blending and adding the cream and cheese. Probably will top with more cheese and it can certainly stand to hold more chicken as well.
I made this for my family and everyone loved it. My kids, who don’t particularly like broccoli, not only loved this soup, they asked for seconds. I calculated the ingredients I used and each serving (if your pot makes 6 servings) is approximately 15 grams of net carbs. This recipe will definitely be added to the monthly rotation!
Very delicious but I skipped the lemon juice entirely and added two stalks of celery. I chopped two heads of broccoli…not sure how much they weighed but it wasn’t too thin. Was delicious without the cheese. Will skip salt in the future, as well. Love how low calorie this is. Amazing recipe– well done!

This came out great. I threw in some left over cooked cauliflower too and it was great. I used 1/8 cup lemon juice and it was great. It gave it a nice flavor. Will definitely be making this again.
