London Broil

Rich and cheese-filled, but not overly so, is this macaroni and cheese with sour cream and cottage cheese. We eat this at all of our large meals because my family adores it.

Prep Time: 15 mins
Cook Time: 10 mins
Additional Time: 5 hrs
Total Time: 5 hrs 25 mins
Servings: 8

Ingredients

  1. 3 tablespoons soy sauce
  2. 1 tablespoon ketchup
  3. 1 tablespoon vegetable oil
  4. 1 clove garlic, minced
  5. 1 teaspoon salt
  6. ½ teaspoon ground black pepper
  7. ½ teaspoon dried oregano
  8. 4 pounds flank steak

Instructions

  1. Mix soy sauce, ketchup, vegetable oil, garlic, salt, pepper, and oregano together in a small bowl.
  2. Score both sides of steak in a diamond cut, about 1/8 inch deep. Rub marinade into both sides of the meat. Store in a covered dish or resealable plastic bag in the refrigerator to marinate for 5 to 6 hours, or overnight. Flip meat every few hours.
  3. Preheat an outdoor grill for high heat, and lightly oil the grate.
  4. Place steak on the preheated grill. Cook for 3 to 7 minutes per side, or to the desired doneness.

This isn’t your mother’s shoe-leather London Broil done in a pan of water in the oven like my mother used to make when I was a kid! I used to despise eating any meat or roast she would make as it was always so dry and tough. I vowed to never put my family through that ordeal and learned how to cook. I was skeptical about this recipe since the marinade is/was so simple. I am used to adding tons of spices, wine, etc., and rarely stick with a recipe. BUT… this easy-peasy recipe caught my eye. My London Broil turned out phenomenal! I ended up marinating it for 24 hours as I just wasn’t able to get back to making it within 5 hours. During that 24 hours of marinating though I did flip it and rubbed it down each time (about 4 times in all). I thought I’d try making it in a skillet on the stovetop. I used very high heat since I have an electric stove (blah). I did the recommended time of 5 minutes per side. It was perfecto! This was a really good deal for just $12 bucks (fed 4) and was a decent quality of meat from my local grocer which is known for the quality of their meats. I will be making this more often.

Tasted good good good good

You must cut the meat very thin. Mine was marinated for 24 hours but was not tender. I will try marinating for 2 days next time. I might try the hammer method too. Also, I added lemon juice to help with tenderizing. It was a thick piece of london broil.

Instead of soy sauce I used 2.5-3 Tbsp Worcestershire sauce & 3 cloves of garlic. Also added Montreal steak seasoning

It was good. I like it rare so I only grilled it for 3 minutes on both sides, and let it rest for 10 minutes. The only reason I gave it 4 stars is because it didn’t like the oregano, and I normally love oregano, but it just didn’t work in the dish for me. I will make this marinade again but omit the oregano.

This recipe was fabulous! First time I used the marinade and it was perfect. This will be my go to marinade going forward. Absolutely the best

My family RAVED over this! Everyone had seconds, and my husband said he liked this more than steak. I was leery about the ketchup, but it thickened the consistency and helped keep the meat moist and tender. The only thing I changed was to leave out the salt, I thought it would be too much on top of the soy salt.

Made the steak so tender it melts in your mouth! This will be our staple for bbq season!

Excellent recipe. It was a bit on the thick side, so I seared it on both sides, then let it finish offset from the grill burner at slightly lower heat. Cooked to medium well and thin sliced it. It is now on my BBQ menu list.

Great marinade! I almost ate the steak raw, it smelled so good. I will definitely use this simple marinade again. I did add an extra clove of garlic.

Really awesome. We grilled ours much longer than time stated, hoever. We took it off the grill after 5 minutes a side and it was not quite cooked all the way and very chewy. Put it back on again, and it was perfection.

New go to marinade for London Broil! I used pepper plant hot sauce in lieu of ketchup and garlic olive oil in lieu of vegetable oil. I did score the meat and also let it marinade for a day. Super flavorful, don’t overcook this cut as it is “chewy” when more we’ll done. Rare/med rare is perfect!

Made this twice, once with London broil (top round) on the grill and once with boneless NY strip in a cast iron pan. Fabulous. Will make again and again.

Family loved it. Reduced pepper to 1/4 tsp as we are not super spicy lovers. Have made several times.

I made this twice…the first time I followed the recipe exactly as presented and grilled it on my Pit Boss pellet grill using hickory pellets…yummmmm. The next time I made London broil I slightly modified the marinade by adding 1 tbs of red wine vinegar, substituting barbecue sauce for the catsup, and marinated the meat in a sealable freezer bag, adding about 1/2 cup of sliced raw onion. Cooked it the same way and O M G, what a difference! The meat was noticeably more tender and the flavor of the marinade was simply outstanding. Served it with seasoned roasted baby red potatoes and cole slaw and grilled corn on the cob…This is a new family favorite!

Love this marinade! I usually buy a family pack of London Broil when its on sale and freeze the second one in the marinade for “emergencies!”

The seasoning, with some lemon juice added (and worcestershire if that is not called for) was amazing. However, the london broil was sooo tough it was inedible. Keep the seasoning, dump the london broil, or cook it in a crock pot after marinating overnight.

I was thoroughly impressed. Skepticism, at first, about the soy sauce and ketchup, but I kept going! I used cloves of garlic, replace vegetable oil with EVOO, and added lime juice. This will be added to my favs list.

really good marinade! We have also used it for pork steaks and other grilled beef cuts.

Delish!
