Lobster Tacos

I developed this recipe for fantastic at-home lobster tacos my family loves after being let down by restaurant lobster tacos. I prepared my food indoors using my grill pan.

Ingredients

  1. 4 lobster tails
  2. salt and ground black pepper to taste
  3. ¼ cup red guajillo chile sauce (such as Herdez®)
  4. 1 tomato, diced, divided
  5. 3 green onions, chopped
  6. ¼ cup shredded Colby-Monterey Jack cheese
  7. 8 (6 inch) flour tortillas
  8. 1 small avocado, sliced
  9. ½ cup shredded lettuce

Instructions

  1. Preheat a lightly oiled grill pan over medium-high heat.
  2. Cut lobster tails in half lengthwise along the spine. Sprinkle with salt and black pepper. Grill until slightly charred and shells are bright in color, about 5 minutes. Remove lobster meat from the shells and chop coarsely.
  3. Combine chile sauce, 1/2 the tomato, and green onions in a large bowl. Mix in chopped lobster meat.
  4. Divide Colby-Monterey Jack cheese evenly among tortillas. Top each tortilla with some of the lobster mixture. Fold tacos over and grill until cheese melts and tortillas are lightly charred, about 1 minute per side. Garnish with remaining tomato, avocado, and shredded lettuce.
  5. Serve on corn tortillas if you prefer.

The season was different

Made these yesterday for our Bills/Patriots tailgate. I prepared the tails ahead of time, adding a little lime juice and butter as they cooked in the shell, and then did the reheat adding the Herdez sauce, tomato & green onion on site. Also used a double layer of toasted corn tortillas since the filling was a bit saucy. Delish! And fast.

We really liked this as a change of pace. I bought lobster already cooked and did not reheat the meat as I didn’t want it to dry out. Even so, these were good.

Really delicious. Found small lobster tails on sale so I splurged on a couple. This comes together very quickly . The guajillo sauce is my very favorite of the Herdez sauces so I was happy to see this recipe. I used corn tortillas. I am going to try this with some fake lobster next time as that is a little more in my price range
