Lobster Roll Cake

Ingredients

  1. 1 cup coarsely chopped strawberries
  2. 1 cup mini marshmallows
  3. 1/3 cup sweetened shredded coconut
  4. 1/2 cup plain Greek yogurt
  5. 1/2 cup whipped cream
  6. 2 pieces green apple licorice
  7. 1 10.75-ounce frozen pound cake, thawed
  8. 2 gummy lemon slices

Instructions

  1. Combine 1 cup each chopped strawberries and mini marshmallows, 1/3 cup coconut and 1/2 cup each plain Greek yogurt and whipped cream in a large bowl with a rubber spatula. 
  2. Using kitchen shears, cut 2 pieces green licorice on the diagonal into small pieces. Fold into the strawberry mixture; cover and refrigerate. 
  3. Preheat the broiler. Using a serrated knife, shave the edge off both long sides of the pound cake. Make 2 lengthwise cuts, about an inch deep, in the top of the cake, 1 inch in from each edge. 
  4. Carefully pry out the middle strip. Place the rest of the cake on a baking sheet and broil, turning, until toasted on all sides. Fill the opening in the cake with the strawberry mixture, mounding it on top; serve with gummy lemon slices.

This was easy, tasty–and fun. I live in Maine, and yesterday, we had a sort of “lobster fest” with friends who were staying with us– we ate lobster both for lunch (rolls and dinner (boiled. One of our guests was allergic to the crustacean. He was a very good sport to put up with the lobster mania around him. As a reward, I made this cake for him. He enjoyed his “lobster roll” greatly and shared nicely with the rest of us. I used a 16 oz loaf (all the grocery store had and doubled the filling–1 1/2 times the recipe would have been fine, but I’ll enjoy the leftovers!

Easy to make and tastes great. Everyone was impressed with the creativity. The hardest part is finding the pound cake and the apple licorice so Entemann’s butter loaf works well and I replaced the apple licorice with green bing cherries which added even more color and flavor.

Did not add the yogurt as it gave it a very funny flavor and added more strawberries. But it was delicious. I was at a family lobster feast in Maine and some people thought there was actually lobster in the cake and wouldn’t even try it…their loss!! Those that did try it liked it.
