Ingredients

  1. 1 head cauliflower
  2. ½ cup sour cream
  3. ½ cup shredded Cheddar cheese
  4. 1 teaspoon dry ranch salad dressing mix (such as Hidden Valley Ranch®)
  5. ½ teaspoon onion powder
  6. ½ teaspoon garlic powder
  7. 1 tablespoon butter, cut into small pieces, or more to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until very tender, 15 to 20 minutes. Transfer cauliflower to a bowl, mash, and strain excess water.
  3. Mix cauliflower, sour cream, Cheddar cheese, ranch dressing mix, onion powder, and garlic powder together in a 9-inch baking dish; top with butter.
  4. Bake in the preheated oven until bubbling, 30 to 45 minutes.

Delicious! I use dry Italian dressing instead of ranch because that’s what I always have on hand. I add a little extra cheese and some chives, and didn’t bother with the butter. I make this every couple of weeks—we love it!

Love it but substitute cottage cheese as I didn’t have sour cream or yogurt. I added tuna fish after draining it, added lemon juice then drained it. Added green onions. It was delicious. Love this recipe as could cook with variety additions as casserole or leave as side dish.

Excellent way to enjoy cauliflower, very tasty, looked beautiful with cheese & brown top! Easy & quick to make, because you can do other prepping for meal while cauliflower steams & when in the oven. I mixed the sour cream, grated cheese & spices in a separate bowl, also added fresh ground pepper (maybe I’ll add chopped green onion slivers next time)

This was very delicious. I cooked onions in the butter and added minced garlic to taste instead of the onion powder and garlic powder. I topped it off with a lot more cheddar cheese. This was excellent as a leftover side dish 2 days later.

This turned out so delicious. I was skeptical about putting the brown sugar and ketchup on the bottom, but the juices from the meatloaf cooking caused the whole meatloaf to marinate in the brown sugar and ketchup mixture. I did add bell peppers. I will absolutely be making this again.

I made this per the recipe, only I used frozen cauliflower. It mashed up pretty well, added the specified ingredients, only I added a little cheddar cheese on top as well as in the mixture. Y’all, I just didn’t like it. I didn’t care for the ranch flavor. Maybe I’ll try again without the ranch seasoning. Someone mentioned bacon bits, maybe that would do the trick. Could be I needed a fresh head cauliflower, or at least more frozen. Maybe it needed to be beaten like mashed potatoes. Back to the drawing board…I’ll try again.

This was pretty good. I used a bit extra cheese and fresh garlic and onion, forgot the butter on top but didn’t seem to miss it. The flavor was ok, but I think the artificial taste of the Ranch mix came through too strong for me. Thank you for a good change for cauliflower!

I introduced my family to everything cauliflower and we definitely wanted “mash potatoes” for Christmas dinner. This recipe was easy to follow and I had majority of the ingredients on hand. I didn’t have ranch seasoning. But it came out wonderfully.
