Ingredients
- 2 cups (1 pint) raspberries, divided
- 2 tablespoons confectioners’ sugar
- 2 tablespoons Limoncello (Italian lemon dessert liqueur)
- 1 brick, 8 ounces, Neufchatel cheese, at room temperature
- Shortbread cookies for serving (recommended: Walker’s Shortbread Triangles)
Instructions
- In a small bowl, using a fork, mash 3/4 of the berries with the sugar and liqueur until fruit is broken down but still slightly chunky. Refrigerate for 20 minutes and up to overnight for flavors to meld.
- When ready to serve, put the cheese on a plate with a rim. Fold the remaining whole berries into the chilled berry/liqueur mixture until combined and spoon it over the top of the cheese. Serve with a cheese knife to smear the delicious mixture on the shortbread cookies.

Very delicious, but very expensive because a small bottle of limoncello is about $16.
My family loves this!!
The flavor was awesome, but the mixture got really runny on me. I’m guessing I mashed the berries too much, bringing out the juices more than needed. I made it at midnight to serve at 3pm the next day, so maybe it sat too long too, giving more time to “juice up.” I also made the mistake of letting the cream cheese sit out too long to soften. So the combination of cream cheese that’s too soft and topping that’s too runny made for a little bit of an embarrassing presentation. I would make it again being careful not to mash the berries too much. I’ll give Claire the benefit of the doubt and take the blame myself for this one.
The only change I made was using Strawberries instead of Raspberries and Splenda.. This will be used any chance I get!

What a great recipe!! As soon as I saw Claire making this I knew I would love it! So easy and my 12 guests raved about it and wanted the recipe! I used Lorna Doone shortbread cookies….delicious and just the right size,,,40 cookies in the box versus 8 Walker shortbread cookies at the same price! I can’t wait to fix it again!
I made this for a group of women and it was a big hit. I did not want to add alcohol so i squeezed a little lemon with the raspberry mixture. The cookies were great with it. I will make this again and again.
