Ingredients
- 3 sprigs fresh thyme
- 2 ounces limoncello liqueur
- 2 ounces Chardonnay
- 1 cup ice
- 1 pasteurized egg white or equivalent egg white substitute
- 1 teaspoon gin
- Splash of club soda or seltzer
- 1 lemon twist
Instructions
- 1. Place the thyme and limoncello in a glass and mash with a muddler or the handle of a wooden spoon for 2 minutes.
- 2. Strain the limoncello and pour it into a blender along with the Chardonnay, ice, egg white and gin. Blend until smooth and frothy. Pour into a chilled glass and finish with a splash of club soda. Garnish with the remaining sprig of thyme and a twist of lemon.

A good start! I was intrigued by this drink as I had tried something with egg white foam previously and LOVED it! Don’t be nervous to try it – it adds a different level to your alcohol. I eliminated the gin as the limoncello I used was homemade and already quite strong. I desire more thyme flavor, so maybe more in the initial step or let it soak longer? I’ll play around with it, but definitely worth trying!
