Ingredients
- 3 large egg whites
- 1/2 cup sugar
- Grated zest and juice of 1 lime
- 1/2 teaspoon pure vanilla extract
- Pinch of salt
- 1 14-ounce bag sweetened shredded coconut
Instructions
- Preheat the oven to 325 degrees F and oil a baking sheet. Whisk together the egg whites, sugar, grated lime zest and juice, the vanilla and salt in a mixing bowl; fold in the shredded coconut.
- Drop tablespoonfuls of the coconut mixture onto the prepared baking sheet; pinch the tops to form peaks. Bake until golden, 25 to 30 minutes.

Just made these, and used parchment instead of an oiled pan. Think I let them cool too long because they wouldn’t peel off the parchment. But, wow, are they good!
