Ingredients

  1. 1 pound ground turkey
  2. 1 teaspoon chili powder
  3. 1 teaspoon ground cumin
  4. Kosher salt and freshly ground black pepper
  5. One 14.5-ounce can black beans, drained and rinsed
  6. 1 cup prepared fresh salsa
  7. 1 chipotle chile in adobo, chopped, plus 1 tablespoon adobo sauce
  8. 12 corn tortillas
  9. 2 Roma tomatoes, diced
  10. 1 ripe avocado, diced
  11. 6 radishes, thinly sliced
  12. 1/2 cup queso fresco
  13. Fresh cilantro leaves
  14. Lime wedges
  15. Sour cream

Instructions

  1. Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more.
  2. Meanwhile, lightly char the tortillas over an open flame. Set aside wrapped in a clean kitchen towel to steam.
  3. Spoon the turkey mixture onto the tortillas and serve with diced tomato, avocado, radishes, queso fresco, cilantro leaves, lime wedges and sour cream.

Try this with cauliflower instead of meat! I chop it about the size you would break your meat up when cooking. Sauté the cauliflower just as you would meat and seasonings. I will never go back to burger in my tacos again!

Fast! Easy! Really good! Adaptable!  So…. needed to use up some fresh ground turkey thigh meat and whip up lunch. This was it… fast, easy, delish.  Adapted it to a kind of taco salad by arranging everything except the tortillas over shredded romaine in a bowl and adding blue corn tortilla chips around the bowl in lieu of the tortillas (had lovely fresh corn tortillas but the salad bowl approach made it easier to eat while doing computery stuff…) So adaptable to tostadas, nachos, or even burrito filling in a pinch … Great recipe.

DELICIOUS & EASY! I’ve been making this a while and it’s just fantastic as is. But I just wanted to share a couple tweaks I’ve made to make it (to my palate) even better. I added a sprinkling (about 1/2 tsp) of garlic powder to the spice mix. And though I’m a Gringa, I could stand just a little more heat = add an extra chipotle, but mince finely. I use store salsa (Herdez Medium) but it tends to have a lot of liquid, which I drain, slightly, so the final product isn’t so watery at the bottom of the bowl. Either way, big thumbs up dear Ree!
