Lightened-Up Slow-Cooker Chicken Buffalo Dip

This party dip usually comes with bragging rights for an indulgent amount of fat. Our slow-cooker version is full of the same big flavors but with fewer calories and less fat.

Ingredients

  1. Two 8-ounce packages reduced-fat cream cheese, cut into small pieces
  2. 2 cups shredded white meat from a rotisserie chicken, skin and bones discarded
  3. 2 cups shredded low-fat Cheddar (about 6 ounces)
  4. 1 cup buttermilk
  5. 1/3 cup hot sauce, such as Frank’s
  6. 1 tablespoon all-purpose flour
  7. 1 teaspoon Worcestershire sauce
  8. 3/4 teaspoon cayenne pepper
  9. 1 teaspoon garlic powder
  10. 1 teaspoon onion powder
  11. 1/2 cup parsley leaves, chopped
  12. 1/4 cup crumbled blue cheese
  13. Celery and carrot sticks, for serving

Instructions

  1. Put the cream cheese, chicken, Cheddar, buttermilk, hot sauce, flour, Worcestershire, cayenne, garlic powder and onion powder in a slow cooker, and stir to roughly combine.
  2. Cover, and cook on high for 2 hours; the mixture should be bubbling and the Cheddar melted. Stir until smooth and combined. Sprinkle with the parsley and blue cheese, reduce the heat to warm and serve with celery and carrot sticks.

I have made this at least a dozen times and it is always a hit. The person who described it as “messy goo” definitely did not follow the recipe correctly. Everyone I have made it for comes back for seconds and it is always the first to go at a snack buffet!

I made this today and love it. I did not use rotisserie chicken but instead baked some chicken breast I had in the freezer that I wanted to use up. It was a great recipe for my eight year old son to help with and he loved it too.

This reduced fat version of a traditional Buffalo Chicken dip is fabulous! It’s been a hit at every party I’ve brought it to!! Perfect blend of spicy and savory goodness- the celery and carrots lend a cool taste to the dip– I serve it with “scoop” type tortilla chips as well- never make it home with leftovers!
