Lentil Protein Brownies

Ingredients

  1. cooking spray
  2. 1 (15 ounce) can green lentils, drained and rinsed
  3. 3 tablespoons water, or as needed
  4. 3 eggs
  5. 7 tablespoons white sugar, or more to taste
  6. 3 tablespoons margarine (such as Smart Balance®)
  7. 1 teaspoon vanilla extract
  8. 6 tablespoons cocoa powder
  9. 5 scoops vanilla protein powder

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Coat bottom and sides of an 8-inch baking pan with cooking spray.
  2. Place lentils and water in a blender; puree into a smooth paste.
  3. Transfer lentil paste to a large bowl. Mix in eggs, sugar, margarine, and vanilla extract. Stir in cocoa powder and protein powder until batter is thick and well-combined. Pour into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
  5. Substitute chocolate protein powder for the vanilla powder if desired.
  6. You can use 2 eggs and 1 egg white instead of 3 whole eggs if preferred.

alright this is a good idea recipe, basically if you want it good, you’ll have to add your own personal fling. for me I cooked lentils and after they were done I added them to a honey and cocoa powder mixture, while hot, and mashed them and mix them up, I would recommend adding a ripe banana as well. after mixing it up I let it cool before I added the eggs as I did not want the mixture to cook the eggs, I also added vanilla and enough protein powder to give it the consistency of a normal brownie batter. only baked it for 18 minutes in a 350 degree oven, I would recommend doing a shorter time to let them be more moist. my friends tried them and I enjoyed them. they taste like a really good protein bar, not so much as a decedent brownie but hey, this version is loaded with nitrates and protein, and little to no fat

I had issues with the batter on this recipe. It was very runny. Also, we thought they were too bitter and I typically don’t like things too sweet, so I suggest adding more sugar or a touch of agave and leave out the water. Let them cool completely before tasting. Thank you for the recipe.
