Lentil Brownies

Ingredients

  1. Nonstick cooking spray
  2. 1/2 cup dry light brown lentils
  3. 1 cup old-fashioned rolled oats
  4. 1/4 cup cocoa powder
  5. 1/2 teaspoon baking powder
  6. 1/2 teaspoon baking soda
  7. 1/4 teaspoon kosher salt
  8. 1/2 cup natural applesauce
  9. 1/3 cup honey
  10. 1/4 cup creamy almond butter
  11. 2 teaspoons vanilla extract
  12. 1 egg
  13. 1 1/4 cups semisweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Mist an 8-inch square baking dish with nonstick cooking spray and set aside.
  2. Add dry lentils and 1 cup water to a small saucepan. Bring to a boil, cover and simmer until lentils are tender and most of the liquid is gone, 15 to 20 minutes.
  3. Add oats, cocoa powder, baking powder, baking soda and salt to a food processor. Pulse until a fine flour forms and the oats are completely smooth.
  4. Add cooked lentils (and any leftover liquid), applesauce, honey, almond butter, vanilla and egg and process until a smooth batter forms. Using a spoon, fold in at least 1 cup of the chocolate chips.
  5. Pour the batter in the prepared baking dish and even out the top using a spatula. Sprinkle the remaining chocolate chips over the top. Bake for about 25 minutes. Let cool for at least 10 minutes before cutting and serving.

These turned out pretty well! Subbed mashed banana for the applesauce, maple syrup for honey and abuelita chocolate powder for cocoa powder. Would make these again 🙂

The texture on these is pretty great, and I think that they have great potential. The reason that I docked a star is because I don’t find them to be sweet enough, but I really think that it would be very easy to make them a five by adding in a little more sweetener of your choice.
I must admit that I did make some other changes – I know that makes my review a bit less helpful, but here they are.
I processed the dry ingredients as instructed until a flour-like consistency. I used green lentils rather than brown ones, and cooked them for more like 35 minutes. I blended them with the cooking water in a magic bullet with more like 1/3 a cup of peanut butter until smooth. I added these with the apple sauce and honey to a mixing bowl. I added in two “flax eggs” (2tbsp ground flax seed, 5tbsp water, let sit for at least 5 minutes) in place of the hen’s egg, because I have a ton of flax on hand and want to use it up. I increased the amount of vanilla (because I never measure vanilla) and stirred the batter together by hand with 3/4 of a bar of chopped white chocolate, then sprinkled the remaining white chocolate on top. I baked for an extra 7 minutes.

These are delicious!  I didnt notice there were lentils in the brownie. I added walnuts, which I liked. It does have a chunkier texture, but that could also be due to my dinky 3 cup food processor. Definitely worth a try if you’re looking for a healthier brownie

Great recipe! I have made these several times. I added a teaspoon of cinnamon to the dry ingredients because I love the combination of cinnamon and cocoa and it was a hit.

These brownies are absolutely delicious. I do add 3 dates to make them a little sweeter. I have 2 double batches in the 2 weeks since I saw the recipe on the kitchen. I have given them to so many people to try and I get raves reviews from everyone, including children.

I made this recipe after watching an episode of the kitchen where they raved about them.

Personally I thought they were awful.

They claimed that they taste exactly like a normal brownie… Which they do not

They tasted very very very very very very very very very healthy… But nothing like a brownie

I did Anticipate that they may be a little less than a typical brownie but not this bad.

was skeptical at first, but they turned out pretty good! they taste like a brownie, the texture of mine is a little chuncky but more like a brownie with nuts. will def make again!
