Ingredients
- 1 cup all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 6 tablespoons unsalted butter, softened
- ½ cup white sugar
- ½ cup sour cream
- 2 teaspoons grated lemon zest
- 1 teaspoon vanilla extract
- ½ teaspoon lemon extract (Optional)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets.
- Combine flour, baking soda, and salt in a small bowl.
- Cream butter in a large bowl with an electric mixer on medium speed. Gradually add sugar and beat until light and fluffy. Beat in sour cream, lemon zest, vanilla extract, and lemon extract. Reduce speed to low; beat in dry ingredients just until blended.
- Drop tablespoonfuls of dough on the prepared cookie sheets, spacing them 1 inch apart.
- Bake in the preheated oven until cookies are set and edges are golden, 10 to 12 minutes. Cool for 1 minute. Use a wide metal spatula to transfer the cookies to wire racks to cool completely.

Not much lemon flavor they were just bland. They were a nice soft cookie.
While I liked the favor of the cookie, next time I would: 1) double the recipe. I barely got 18 cookies out of this and 2) I would put a lemon glaze on it to give it that “kick”. Good basic recipe though.
very good there are only 8.4 carbs per cookie so my diabetic husband can enjoy them.
These cookies are very soft and not too sweet. My toothless Dad loved them. I did not use the lemon extract but I might add some next time just to see the difference but I didn’t use it this time.

Light and airy. My family loved them. I added an egg for a cake like texture. I did not use lemon extract, instead I substituted orange zest. I frosted them with a drizzle of powdered sugar with the juice of the orange.
