Ingredients
- Zest and juice of 1 large lemon
- 2 tablespoons Dijon mustard
- 1 tablespoon chopped fresh tarragon
- 1 teaspoon clover honey
- Kosher salt and freshly ground black pepper
- 1/2 cup olive oil or canola oil
Instructions
- In a medium bowl, whisk together the lemon juice, zest, mustard, tarragon, honey, and a little salt and pepper. Slowly whisk in the olive oil until emulsified.

This makes a lot of dressing. We used about 1/3 of it for a salad with hard boil eggs, tomatoes and salmon. It was fabulous!
This is very similar to theHoney Tarragon Vinaigrette we make and serve in banquets at the JW Marriott. The lemon gives it a completely different taste.
Wonderfully light and lemony. Exactly what my husband and I were looking for. Perfect potato salad dressing. Would be good on a green salad too.
This was an excellent vinaigrette, just pour half over potatoes and leave saucer for whoever wants to add more to potatoes. Kids do not like as much.
