Ingredients

  1. *1 1/2 cups cooked meat (pork, ham, turkey, chicken, or roast beef)
  2. 2 hard-boiled eggs
  3. 1 cup mayonnaise, plus more as needed
  4. 1/2 cup grated cheese (Cheddar, Swiss, mozzarella)
  5. Seasonings: curry paste, gherkins, paprika, olive paste, ground cumin, fresh sage, red peppercorns, Dijon mustard, prepared horseradish
  6. Kosher salt
  7. Freshly ground black pepper
  8. Bread or crackers, for serving

Instructions

  1. Put your choice of meat, the eggs, and mayonnaise into the bowl of a food processor. Add the cheese (see below*) and seasonings (see below*) and process until the mixture is well blended and has a smooth texture, about 20 seconds. Add more mayonnaise as needed if the pate is too dry. Taste and adjust seasoning with salt and pepper. Serve with bread or crackers.
  2. *For pork: Cheddar cheese and 1 tablespoon curry paste
  3. For ham: Swiss cheese, 4 gherkins, and 1 teaspoon paprika
  4. For turkey: mozzarella cheese, 2 tablespoons olive paste, and 1 teaspoon ground cumin
  5. For chicken: Cheddar cheese, 1 tablespoon chopped fresh sage, and 1 teaspoon red peppercorns
  6. For roast beef: mozzarella cheese, 2 tablespoons Dijon mustard, 1 teaspoon horseradish

This has been my “go to” for quick and effective. Use your imagination. I am using a smoked ham and cheddar combination on buttermilk biscuits for a train ride to the zoo this weekend. Don’t be afraid to experiment. Great way to use left over beef with a creamed horseradish and white cheddar cheese etc.
